The sushi chef, Shigi, bought this restaurant from the former owner this year. May want to consider that if you are reading the older reviews. I had already eaten at another Japanese restaurant for the evening (not content with the food and thought they had ramen), and the sushi chef at that restaurant actually recommended Yama Sushi for good ramen. I loved it. Chef Shigi-san suggested the off menu shoyu chicken broth ramen for me. One would think on my second dinner of the night I would be too stuffed to eat anything more, but this bowl of ramen was worth it and the eventual stomach ache Im sure to have in about an hour. The broth was what made it stand out. You could taste the slow simmered broth, the skill at the individual ingredients, and the comprehensive flavor that worked together. I think thats the hardest part of great ramen as the ingredients are generally the same. The favors were traditional shoyu, yet additionally special with whatever magic he did to make it so I ate the whole thing in seconds. Ashitama (spelling?) egg was cooked perfectly, and I ordered an extra one to compliment the rest of my ramen-heaven. The tonkatsu pork was thinly sliced with just enough fat to make you wanting to savor each bite to save with a bite of noodles. Also, they serve "ippin" or Japanese "tapas" (small plate sized menu items), and I tried the tontoro, or pork cheek. Absolutely delicious. May not sound good to traditional western cuisined appetites, but it tastes like pork belly which tastes like awesome. Ive eaten tons of ramen in Japan and also thru out the Texas metro areas like Dallas, Austin, and Houston, and the total genuine Japanese sushi and bar experience at this place makes it one of my favorites. Absolutely recommended. Sit at the bar and chat with the chefs if its a slower night! Now, I came on a Monday night where it is slower, so my service, conversation, and food time were great. I know there is an incredible Tuesday night sushi special, so its very busy then per Shigi-san. Probably coming back tomorrow with a larger stomach.

I lived in Japan for roughly 2 years not long ago, and upon moving to Dallas wanted to find a *real* Japanese restaurant (i.e., not teppanyaki or just another sushi bar, with all due respect). I took my wife along for the experience and we walked away pleasantly surprised and plan to go back as often as we can. The place looked, smelled, and felt like a little restaurant in Japan--at least how I remembered them. Its not fancy, or upscale per se, but that wasnt what I was looking for; my goal was to find a eatery that had traditional Japanese dishes that were prepared, served and tasted like the real thing, and that was exactly what we found. Because of Sushiyamas authentic taste, atmosphere and feel I highly recommend it--if thats what youre looking for, that is. If youre looking for teppanyaki (e.g., Benihanas), or a nightclub ambience, then I would steer clear of this place, thats not what is provides, nor is that its purpose. What we ordered: -gyouza (potstickers): They were excellent and tasted just like what I had eaten many times in my travels in Japan. -gyudon (beef/rice bowl): ditto -curry rice: ditto Also, the waiter/waitress were Japanese and both relatively young, which leads me to assume that its owned and operated by a Japanese family (which is a good sign in my mind). And one more thing I noticed that there were also some Japanese customers, yet another good sign as to the quality and authenticity of the food. If you love authentic Japanese food or would love to experience a piece of Japan I recommend dropping in for a taste. Its not fancy whatsoever, but its the real thing.

I have been going here sicne I was a little girl. My dad was the one who got my family hooked on this place. However, now that I am 20 I have found that the service here is bad. Dont get me wrong I love the food. I am currently a college student and try to go here every chance I get and leave as much tip as I can but apparently that isnt enough for these people. The last time that I went the waitresses were so mean they said that they already charged their tip into the bill and the tip was 15%, they didnt even do anything that night they did not even refill my water. Every time that I go I spend at least $50 or more and its on a wednesday night when they have their speicals. And I will leave any where from $3 to $10 if I have it. Well they have a new waitress and she even got in on the you are a cheap scape and you should give us our $10 today. They even said that the owner said it was fine to charge me the 15% on my bill and the owner was not even there. I told them I will not be comming back and they said it was fine, to me I would think you would want to keep your customers rather than allow your waitresses tip but hey thats just my point of view and if this is really how the owner treats his customers then I am happy I do not go there any more. I have even told all of my friends and family about what happened and they agree that if that is how they want to be we all will not be going there any more. I HOPE WHO EVER DOES GO THEY HAVE ENOUGH MONEY TO LEAVE THEM A GOOD TIP ORTHEY WILL COME AND GE YOU IN THEY END.

I dont understand how the other reviewers could possibly give a positive review. Weve never been made to feel like we werent wanted at a restaurant in all of our dining experiences in Dallas, but that is exactly how we felt the moment we walked in. We were eye balled by everyone the whole time by the other customers, and had to seat ourselves, the waitress didnt approach us for almost 15 minutes. We ordered 6 rolls and a fried pork dumpling appetizer. It took 40 minutes for the dumplings, and we got the rolls one at a time over the next 45 minutes. I REPEAT IT TOOK OVER 90 MINUTES FOR SUSHI AND FRIED FOOD. Waitress was absolutely terrible, she wouldnt even look us in the eye, we had to literally step in her path to get her attention, and there were no free refills on soda (you get a can for $1.25). We even had to ask for waters!! We watched 1 other table of 3 cancel their orders and we only got 5 of 6 rolls before we had had enough. Never again will we step foot in this awful place.

I love this place. I came here all the time when I used to go to Richland College but unfortunately I live in Denton now. I still think the drive is worth it though and when Im in town I make an effort to visit this great place. For an appetizer we usually get the shrimp tempura or the takoyaki. My favorite sushi rolls are the spicy tuna roll, shrimp tempura roll, spicy salmon roll, and the dragon roll. I usually get the spicy yama ramen or the katsu curry as an entreé and all of their desserts are A+. I dont understand why everyone keeps saying they give small servings. Every time I go there Im absolutely stuffed. The entreé buy itself always fills me up. Im just a pig and always order more than I can eat. My only pet peeve is after they opened more restaurants the music inside changed. They now have this upbeat american music which doesnt match the theme of the rest of the place.
