The barbecue scene in San Marcos is starting to get crowded. About a year ago, San Marcos BBQ took over the spot that Hays County BBQ vacated. Owner/pitmaster Justin Pearson has some BBQ experience working with his grandfather at Chisholm Trail Bar-B-Que in Lockhart. He is using the same pits that Hays County BBQ left behind. The location is tucked away a couple of miles off of IH-35. The first thing I noticed was the prices. They were comparatively lower than some of the places I go to. I have now done back-to-back posts where brisket is 13 bucks a pound. That is a heck of a deal. I ordered a quarter pound of moist brisket, one pork rib, half link of the regular and of the jalapeño and cheese sausage. I had a coupon for a free side so I got the braised cabbage. That is healthy, right? The brisket was solid. The rub consists just of salt, black pepper, and a little red pepper. It had a good flavor but was a little chewy. The post oak gave the meat the right amount of smoke without overpowering it. The brown sugar with a touch of barbecue sauce gave the rib a nice sweetness. It played well with the smoke. The rib meat was tender towards the middle but dry and hard around the edges. Homemade sausages are always an added bonus in my book. The sausages had a great coarse grit with a good snap from the casing. They both had a good amount of fat. The regular was a little bland. Salt can go a long way in sausage making. I prefer the jalapeño and cheese because it had more of a taste plus a spicy kick to it. The braised cabbage was an excellent change of pace and had bits of sausage in it. I felt my blood pressure drop while I was eating it... Thinking of all the options in San Marcos, I would still come back to San Marcos BBQ. You get more for your money, and the cue was above average. I only spent $10 on my lunch. Next time I will take Amber so we can try the turkey, chicken, and pork chop.

We had chosen San Marcos bbq to cater our wedding for 120 people. JustinPearson was so kind and accommodating. The night before our wedding the venue we were using fell through! We were in a panic! My sister graciously offered her house and yard that was lovely. But all the details of contacting guests, caterers bakers, band, etc... We had 10 hours to pull this off. I called justin and he could not have been more reassuring and accommodating. He even offered the restaurant for our reception. They delivered at a different time and place without any problems. The guests raved about the food, the turkey was AMAZING! We will be loyal customers, what a find! Thank you for rescuing my wedding day! The whole day was better than I could have dreamed! Thank you, thank you, thank you!

After the outlets, we stopped here for lunch. My wife and I have had a lot of different BBQ around the world, tx, LA, KY, MO, and TN to include all the states we missed and this is by far some of the best weve ever eaten. The brisket was tender and moist, the ribs were Kansas City style with a great dry rub consisting of mostly pepper, but it certainly wasnt overpowering. Their chicken was equally moist and delectable. Their sausage is smoked to absolute perfection, I dunno, this place is just terrific. I didnt have my phone on me to take pictures, but the others on TA are fine. Dont miss this place. Skip the food court and corporate chain restaurants, SMBBQ is the spot!

We used to drive to Lockhart about once a month just the BBQ. Best in Hays county, no question. Since we discovered this place, there has been no need to waste the gas to Lockhart. The brisket is perfect every time, Ive never had such consistently delicious brisket. its on point every visit. The sausage is snappy and wonderful (wish they had a jalapeno or jalapeno/cheddar version though). The sweetness of the ribs is excellent and a welcome change of pace, but did take some getting used to at first. Ive never been big on sides but they are all phenomenal here, especially the braised cabbage and mashed potatoes. Love the quiet atmosphere.

Disgusting. Just left this place 5 minutes ago and I would give negative stars if possible. The ribs would be better described as jerky. The mac and cheese tasted like flour and Kraft cheddar. I ended up throwing most of it away. When I told the manager(shorter dark haired man) he said it was impossible they had the best bbq in town. When I asked for my money back he basically laughed in my face. I had two friends with me who also hated the food. Maybe I got there when they just finished lunch rush and they only had the bad stuff left but I will never go back again and Ill tell everyone to avoid this place like the plague.

Love the sandwiches at this place. They have a combo sandwich that is sausage and sliced brisket. However, if you ask them, they are nice enough to make a combo sausage and chopped brisket sandwich. Love the chopped brisket because you get pieces of the brisket crust which give you a bit of a burnt flavor and a strong brisket flavor. Their sausage is terrific as well so combining these two on a sandwich makes for an awesome flavor profile. Its like taking your taste buds to Six Flags for the day. Quite possibly the best bbq sandwich Ive had in 35 years.

My wife and I traveled to San Marcos to watch a football game last weekend, and we wanted wanted BBQ. We were closest to San Marcos BBQ, so we decided to try it. It was such a nice surprise, from the attention from the workers, to the down home atmosphere of the place. The brisket was good, moist, and we agreed that it was probably the best we have had. Would definitely recommend this place, and will definitely come by again when we are in the neighborhood. JZ

We love everything about SMBBQ! The people are always friendly and helpful, and the food is always delicious! There is no bbq in San Marcos that can even come close to this place. Everything frome the brisket to the macncheese and braised cabbage is off the charts good. This place is our absolute favorite and we will not go anywhere else for bbq. If you want true hill country bbq, then you have found it.

Was in San Marcos for a meeting so stopped here afterwards for lunch. Excellent service. Nice wood pile of seasoned oak outside. Moist brisket was great with nice bark. Lean brisket cut from same piece was dry. Nice smoke ring. Sausage was OK. Pork rib was tough and dry. Cabbage side was awesome. Mac & cheese was average. Overall a pretty average experience.

Brisket was super fatty. More fat than meat, literally. I know brisket should have some fat but not like this, I actually enjoy the fatty part but this was way too much, I take it to go and the 5 minutes I took me to get in to my house the 2 layers of paper and the paper bag where all soaked with grease and also my car seat. My birthday treat was ruined.

Head on out now to this quintessential bbq joint. It will not disappoint! The brisket was moist and delicious; the sausage was juicily smoked to perfection; and the ribs were "awesome". The side choices were abundant and all wonderful. And not to forget the friendly, helpful staff in a clean and comfy south Texas style space. Yall will luv it! ❤
