Initial excitement ended with disappointment. We had a soccer tournament in the area the weekend of Oct 17th & stayed at a hotel in Germantown. As a bbq enthusiast, we did research prior to our trip. We asked several "locals" their recommendation for the best bbq. Without hesitation on multiple inquiries, the "Commissary" was suggested. That sealed the deal for me. We loaded up the cars and immediately headed out. We turned the corner and saw the bbq "shack" that I had envisioned in my mind and the line out the door only confirmed what others had told us. We all anticipated a big treat in the near future. Unfortunately, the high point of the adventure ended there. We made our way inside and the Host was less than friendly. Not only to our group but to all the other patrons as well. But we looked past that and towards the food. We ordered a little bit of everything. It smelled great. It looked great. It tasted okay, at best. I was most anticipating the ribs. You can take it for whatever its worth but the ribs were over-cooked (by a lot). They were dry. They were tough. I read the other comments before posting and see where a bbq judge had a similar experience. So one might assume there is some validity in these statements. We had others in our hotel that I overheard over the weekend that said "The food was okay but I was expecting more." The Commissary everything you could want in a bbq joint but whoever was working the pits this weekend was slacking. I would go back only because I want to love this place and the lines out the door give me a hope that maybe I simply got a bad batch. Unfortunately, we didnt get that experience this time.

The first time I ever ate at the Commissary was in the early 80s, the first year they were in business. We were moving to Germantown from Memphis during the Germantown Festival....we were REALLY moving, I mean. We were passing by with another load of furniture, sweaty and tired, and my husband said, "hey, weve been hearing so much about the Commissary and never tried it...do you want to?" Well, I had no cash, checks or credit cards on me and surely didnt look like going into a restaurant, even a casual one, and I suggested I would just run in and ask how much a barbecue costs and see what they had and we might stop by later and pick something up. He let me out at the door, and the owner Walker Taylor, was standing at the cash register and I just asked him about menu items and price and told him the story....we were in the process of moving, heard about Commissary, and had no means of payment on us but might stop by later to try it.....he said, "Well, let me just give you a bar-b-q to take with you and see if you like it! And welcome to Germantown!" After some protests on each side for a minute, I said okay. Not only was the bar-b-q to die for, but we thought his warm, down-home, small-town attitude was so great that we were REALLY going to love living in this small (then small!) suburb to the east of Memphis. I now have a different husband, but to this good day, the Commissary remains one of my favorite restaurants for dining in or carrying out, and I still live in Germantown and it has proven to be the great home that Walker Taylor first welcomed me to those many years ago.

I absolutely love the Commisary BBQ... when we used to live closer we would eat it every chance we got. Since we moved it was something we always talked about being an incredible place. Fast forward to today.... we went out of our way on the way back from our trip to stop by our favorite BBQ place. We walked in, excited and pumped ready to chow down. The hostess/ lady working the cash register sat us promptly in a section that as we walked by tables I overheard a man asking the hostess for his server. As we sat there, we saw two servers waiting tables... checking on everyone around us, with no acknowledgment to us... just two people sitting there ready for our order. Our server, as I soon found out carried on conversations on how to properly re-heat food with another table and took a to-go order. He checked on the table right next to us, and then walked to the back. He had to go get silverware for another table, the same table that was looking for his server when we first arrived at the Commisary. After 14 minutes, I asked the hostess who our server was and then I saw the man that walked all around us... Kenny. He responded that he was putting in a to-go order and was busy. Dang Kenny, come on!!!!!!! The Commisary is SMALL, all your tables are within an arms reach of each other. No way, a table should go 14 minutes without being acknowledged by the server. Never even saying hello. The hostess did her best to get us to stay, but we declined because I didnt want to endure the wrath of Kenny. BTW, their BBQ is awesome!

good shack appeal, parking is tight, the service is snappy, the food wonderful. This is worth the drive from downtown memphis. easy to drive by so keep your eyes open. I ordered the two meat combo ribs and pulled pork. The ribs - tender, light crust, subtle smokey flavor. no disappointment here, I got through half of them before I tried the mild & hot sauce (both tasty) The pulled pork - juicy, flavorful, plentiful. The mild sauce on this I thought was the best. but again, good all by itself. The coleslaw - YUM! this was very good. they add a half deviled egg which was really good, and a peperoncini, eat that over your plate! The bbq beans - good portion, but I could have eaten more. yes they were very good. the bun - perfect. Lemonaide - refreshing. - the staff - friendly efficient. - the chachkas - t-shirts good quality, the bbq sauce (its very good) and cheap! the rub (tasty) and cheap! the deserts. While I didnt try and the table next to me tried quite a few... everyone had something good to say about each one. I was so full from my dish that dessert was not an option.

I hate to say it, because we have had great experiences with the Commissary in the past, but my party had a terrible experience at the Commissary tonight. We were seated, and after a few minutes, placed our order for an appetizer (bbq nachos), a half-slab, and the links plate. After about 25 minutes, (at 4:30 pm, in a half-full restaurant) our nachos came. They were immediately followed by our entrees which bugs me bit. Then on top of that, my sausage was cold in the middle and my husbands ribs were, as he described them, "a little odd tasting." We left, feeling like we didnt have such a great time. About four hours later at home, my husband became violently ill and the only thing he has had to eat that I have not in the last four days is the ribs. In short, they really disappointed us tonight. Were Memphis residents and make the drive to Germantown for the Commissary often, and we usually bring folks from out-of-town when possible. I think well be taking our bbq business elsewhere in the future.
