After looking through the 2013 Texas Monthlys Top 50 BBQ joints list, I saw a restaurant on there that was not too far from our house. It was Hays County BBQ which I had never heard of it. It was located in San Marcos which is only about 10 minutes from our house. I had a hankering for BBQ all week and was trying to find a way to go there. My wife and I went to see Star Trek: Into the Darkness at the movie theater in San Marcos. It was a pretty good movie, but I think I liked the first one better. We had eaten at Red Lobster right before the movie because I got a gift card from work. It was dinner time, and we were not hungry. I was at point that I knew I could not make it the rest of the day without eating, but I was not ready for a full meal. I knew we were only a mile away from Hays County BBQ. I thought we could grab a snack there. San Marcos had another BBQ joint that made the list in 2008 called Fuschaks BBQ. I am not a fan of that place. I am not sure why it was on the list. I was hoping Hays would not be the same.The restaurant has been around for over five years now. When we walked in, the setup was similar to Rudys. There was a cooler full of sides. We were there just for the barbecue meat. I ordered a slice of moist brisket and a ring of regular sausage. While true barbecue enthusiasts avoid using sauce, I always try it with sauce to compliment the meat. They had a typical Texas sauce and a spicy one. I like the spicy one better. The brisket was good. I feel like if we went there earlier in the day, it would have been even better. The meat had probably been sitting around so the fat started to un-render. We will have to go back earlier in the day. The sausage was really good. It was very comparable to Smittys. Smittys is home to our favorite sausage. The casing had the pop you were looking for. The meat was not gritty and had the texture you would taste in a good sausage. We will have to return there someday soon to try the brisket earlier in the day. They also have other meats I need to try like pork chops and pork ribs. I would definitely recommend stopping by here if you were on the way to the outlet mall or San Antonio.

Small place and waay overpriced. Top in Texas my butt. They only sell by the pound (no plates) but that was ok. I was sticker shocked when they told me 17 dollars a pound for most meats and 4.50 for a simple sandwich. Im someone who wi pay extra for great food but boy was I sorry. My friend told me he applied there and they offered him minimum wage. Wow can you say greed after charging those prices. The tea was not right at all. How do you mess up tea? The tables were dirty and I watched other customers clean there own table. When I find dirty tables I wonder about there kitchen. The place is so small and seating is limited unless you dont mind there outside seating in the cold or rain. Would you like flies with that? The employees were awful too. They were cursing in front of my kids and the older employees were treating the newer ones like dog meat. I imagine there new because I cant picture anyone putting up with that talk for long and ive had my fair share of bad bosses. I guess what do you exspect for minimum wage. The only thing to compliment is the sweet sauce. Everything else from the staff, food, tea and worst of all prices was not what I exspected and I love food so its hard for me to find fault. When i tried to complain and asked for a manager i was told all but a couple were managers. Someone doesnt know how to run a business. Next time ill save my time and money and drive to Austin or Lockhart if nessisary. Could have gone to red lobster for what I paid but the wife said no lets try it. WRONG! Says mind blown food lover. Still cant believe it.

Their brisket is among the best in Texas. You order by the pound and can specify whether you want meat from the fattier or the leaner part of the brisket -- or not specify. This is classic smoked barbecue. Ive eaten in all of the "Best Five BBQ" places in Texas, several times. This is one the par with these. They also have BBQ pork chops, links, chicken and maybe something else. The links are not as fatty as some, have a characteristic flavoring which you may or may not be thrilled about. I keep wanting to try the chicken or pork chops but the brisket is just so darn good, I cant turn it down. Their beans are the best, with the most BBQ included, and LOTS of black pepper, and I think they are great. When I Say Grace before eating, but when Im here, I dont tell The Lord where Im eating -- for fear Hell snatch them up to heaven to cook for Him. Dont let on, or were liable to lose them!

I have been told by my friends that Hays County was the best barbecue joint in San Marcos. So my wife and I were going to go eat there for lunch today... And right before we got to the to the restaurant my wifes blood sugar levels dropped suddenly to 58 points. No anyone thats knows anything about diabetes knows that is a dangerously low number to suddenly drop to for a diabetic. So we rushed in the door to eat and was stopped by a woman sitting by the door eating that I guessed worked there and was told we could not have my wifes LICENSED SERVICE DOG in there!!!! She is a 8 pound chiuwawa well behaved SERVICE DOG FOR DIABETES!!! IT IS FEDERAL LAW that a service dog can go anywere. I will be reporting Hays County Barbecue to the proper people and more than likely taking legal action as well. The owner of this place should teach the employees manners and about Licensed Service Dogs!!!

i call to order, tell lady that i want to place order for pick up, she says, they r not busy, to go right now, and order when i get there, ok, wife gets there picks up, they dont give her a reciept, i taste brisket, sausage, ribs, bread, onions, pickles, (my potato salad and cole slaw i paid for was not in the bag) ok, in amazed by how they say its the best brisket in hays county, ive been to salt lick and salt lick is a 10 and hays county is a 3, the best of the order, was the fresh pickles, onions, and the bread is good, i would never again purchase here again i prefer to drive to salt lick and eat there i just tried beef rib, it was good, but ill never buy from hays again the 4 star review u guys have, no way, probably family and friends

So many things I dont worry about when reviewing a texas BBQ joint, like decor, sauce, beans or tater salad. What really matters is the meat. Brisket- easily in the top 3 that I have ever been served. Snap apart tender, 1/4" smoke ring with good smoke flavor really good bark and perfect tenderness of the fat. Pork ribs- same tenderness as the brisket and when biting, the meat pulls clean off of the bone. Chicken- hard to get it this good because most places overcook chicken, but this chicken was perfectly cooked with a light pepper and smoke flavor. Sausage- my only complaint is that even the mild sausage is quite hot. It has a good flavor and nice snap to the casing. I would say that Hays BBQ deserves to be in the Texas monthly top 50.
