BBQ Godfather recently relocated their food truck operation to Bernies Backyard in Spring, TX. The special on this day was their Pork Belly BLT, so we ordered one, plus a pound of brisket and three spareribs to share, and a side of their Bacon Mac n Cheese. Visually, the Pork Belly BLT was a nice composition. We had a little trouble with the texture of the pork belly, which we anticipated would have that balance of fat and crispiness you find on a perfectly-seared piece. This was a little dry and tough, and both smoke and seasoning was a bit lacking. As an overall sandwich though, it has potential. Ribs were good, and I found the brisket to be decent as well. As thick as the slices were, it could have used some additional time on the pit to break down connective tissue. The flavor penetration, from rub or smoke, wasnt quite there either. But it was a beautiful cut and I will definitely be back to give this brisket another chance.

The other reviews must have come on a bad day or just didnt know what they were talking about. For a wet rub brisket, this place rocks! Look forward to another adventure here to try everything else. Great spot for families and big groups! Get out of the traffic and stop by!

Wow, Had the brisket last week and it was the best I ever had. Too many experts leaving their opinions. Wet rub? Seamed like a dry rub to me. Got it in kingwood at the Tularusa Grill. Better than any BBQ within twenty miles of here. You wont be disappointed. 10 stars....

The pork belly is awsome but if you can get em before they sell out get some burnt ends. Also try the spicy pulled pork its taste honors the finest Texas traditions in BBQ and spice.
