Dry BBQ With No Regional Identity Hole In The Wall BBQ doesnt do much for me. The pork was extremely dry and flavorless, with almost no smoke flavor or seasoning. I would never recommend this pulled pork to anyone. The brisket was much better, but even then, lacked seasoning, smoke, and was much dryer than it ever should be. If the brisket werent dry at all, and with my own sauce, this wouldve been a pretty decent sandwich. Portions are at least respectable and they do a good job of presenting a delicious looking wrapped sandwich. Still a bit pricey, given the standards, but I get it -- rent is expensive and BBQ takes time. I did like the buns, and I will also say this: the people working here were absolutely great and totally friendly. They let me sample the meat before I ordered and seemed to like what they were doing. But Im afraid that the food just didnt cut it, so far as BBQ is concerned. With some tweaking, I really do think they could turn it around. So far as the sauces are concerned: you shouldnt even need sauce for proper BBQ. Unfortunately, as the meat doesnt seem to have a nice seasoned crust (and probably isnt mopped), the flavors are weak, and this BBQ requires sauce to be edible. Unfortunately, none of their sauces represent any distinct BBQ region and miss the mark. They werent particularly sweet, or thick, or heavy in vinegar. I cant even really describe the sauce in words, trying to explain how disappointing it was. I suppose it tastes like Tobasco, more than anything. If youre in a pinch, the brisket sandwich could be decent if you either like their sauces or can make it home to use your own. Otherwise, the lack of proper BBQ in Seattle continues to be a low point for the city.

Im a San Diegan living in Los Angeles. I stopped here with my fiance on a trip to Seattle because it was near our hotel, and we love barbecue. The meat doesnt have a smoky/barbecuey flavor, but no matter! I had the Pig with Lipstick and the meat was super-tender and moist, and the flavors of all the toppings were perfect together. Ive had lots of barbecue in SoCal and think its better than most of what Ive had down here. I wish it were closer to me!

Pretty much the best barbecue sandwich Ive had -- staff are friendly, and food is quick. I recommend the Pig with Lipstick, but the other sandwiches are really good. Good with beans, or you can get a bowl of chili with it. Great if you are touring Seattle--Walking distance of Pike Pier and the ferry.

Simply everything you want in bbq. Came by for a quick bite. Front man was nothing but excited and friendly. Got my food nice and quick and devoured it even faster. Its not oily or overly sauced. Just perfect balance of sweet, smoky, and spicy. Would highly reccomend.

This place is bbq at the most basic level. Brisket was dry and lacked flavor. The beans...whos ever heard of sweet ranch style beans. Stay away from this place if you like real Barbecue.

Awesome, friendly staff. Best BBQ in Seattle. Just moved here from Texas and it rivals some of the best BBQ in Texas. Try the original sauce "with a kick". Spicy and delicious.
