I was looking for espresso close to the hospital. I searched Google Maps for espresso and found Theory. I was intrigued by the concept of a concession trailer and noted the few but highly scored reviews. I am an espresso aficionado and am particular about my espressos. I choose not to support the giant (they have horrible espresso anyway). I look for local shops using locally roasted beans... POWER to the small business owner! I watched Mark finish a drink for the person ahead of me when I arrived this morning. I could tell right away that Mark was intense about his craft. I ordered a quad espresso, macchiato style and Mark went to work weighing the ground coffee in the portafilter and then weighing the drink, too. This further proved to me Marks knowledge and skill in his chosen craft. Mark described his espresso as fruity but not too much. It was excellent and I will be back as a regular!

This beats every other local flavor of coffee Ive tasted. The guy asked me "What can I get for you?" Two words: "large coffee." As I smelled the fresh brew pouring into the cup, I looked across the street at 7-11 and saw a line at the coffee dispenser. In the car, 20 minutes later, I reached down and grabbed this cup from Theory Coffee and was mesmerized. This stuff is so much better than anything else you can get in the area. I had my first cup today. I think Im going back on my break.

When I try a new coffee place I usually try a regular cup of coffee with nothing added to get a pure taste of what they have to offer. My comment to Mark(owner and barista) was," this is the best cup of coffee Ive ever had". It was delicious! Everything else has been amazing as well. Great guy and great coffee. I had originally stopped by because Barrel House Beard Co. offered their product for sale at his coffee trailer. Little did I know I had discovered the best coffee in SA!

Theory is by far my favorite favorite favorite coffee place. Every coffee Ive gotten has been consistent in taste and quality. They have cream, milk (Mill King for those who care) and homemade almond milk (vegan) as dairy adds and offer pastries by Cest La Vie. Customer service is great, its so good that I am often annoyed by the wait time because people are so chatty with Mark (owner/coffee artist) and his crew. Totally worth the wait though.

Happy to know that San Antonio is gaining more and more great coffee spots. Mark runs a great operation. Using a micro-roaster out of north Austin, he brews up awesome espresso-based drinks, and the drip coffee is great too. He loves to tinker with every pull to try to get the best flavor out of every bean. Also, if you a are facial hair aficionado, then go check out his supply of beard oils. Go check Theory out. You wont regret it!

A total diamond in the rough in this coffee saturated city. Great tasting coffee, fast service and super friendly baristas. Im no coffee expert, but all I can say is that the flavor of this coffee is wonderful. You dont get that burned flavor, just smooth tasty notes of wonderfulness. They always have the best tasting danishes from a local bakery too. I was going to take a picture of it, but then I ate it.

Let me start by saying Im not a diehard coffee drinker, my wife is though. This is her favorite. Its definitely the best coffee Ive ever had. I typically have a couple people ahead of me in line, so it takes about as long as that big box coffee shop down the street. If you like coffee you should at least give this small business owner a try, he works hard to make a great cup of coffee.

Stopped here with my boyfriend for a quick cup of coffee. I had no idea what I wanted, and you selected a coffee for me and made it exactly how I asked. Not too sweet, with a load of caffeine. It was so delicious! My boyfriend even loved his coffee, and he does not even really like coffee. Definitely going back for another cup before work today!

Amazing! First morning here in San Antonio and I set out to find some decent coffee, and boy did I! It just so happened to be right down the street from where Im staying and doesnt look like much when you pull up. The guy working there was great at helping me with my selections and it all tastes amazing! I highly recommend this place!

The coffee is amazing, just the right amount of everything to make the perfect latte. I love coffee and this is the best latte Ive had in quite some time. The barista was friendly and charming. pastry was decadence and is from a local bakery in Castle Hills. Ill be a returning customer.

Its just good. Sorry Starbucks lovers. They dont burn the coffee. Its not overly sweet. Definitely taste the coffee and I dont get the feeling of them trying to rip to off. Just honest to goodness coffee

Amazing tasting coffee and the friendliest barista youll ever meet. Truly this coffee is unlike anything youve ever tasted! If you like lattes I recommend trying a cortado for a change.
