AmuManu was a pleasant surprise here in the midwest. They provide superb hospitality and a refreshingly simple (and tasty) menu. I ordered the Tonkotsu and it had a good flavor profile. The star of the dish was actually the pickled bamboo. I enjoy a lighter broth and found the pork broth to be a little heavy and coating. Pork belly should melt more like butter and this had a bit of chew meaning it was overcooked. The egg was cooked well and together it worked. The noodles were noodles, I wasnt terribly disappointed but I wasnt knocked off my seat. The dumplings is where it fell off for me. We started with our ramen then the dumplings came out towards the end which I wasnt fond of. The dumplings were under steamed and the dough was practically raw. At 2 for $1.50 I wasnt angry but I believe doing a pan sear on the dumplings would add a much desired crunch that the dumplings were lacking. I would like to see them grow a little bit in that area and hope this review helps! Overall: Hospitality: 5 Atmosphere: 4 Price: 5 Food: 3

Amu Manu has the best pork dumplings in town! When I became a vegetarian, I switched to the vegan dumplings and was not impressed. I gave them three chances and the wrapper seemed hard and undercooked each time. I also attempted to switch from Pork Miso to Vegan Miso. I thought I really liked the tofu, as it had a unique "crust" around it. Then it turned into more of a weird mouthfeel, and I gave up on tofu. Now that I do the vegan miso, no tofu, add a pat of butter, Im in LOVE again! The noodles are hearty enough that I dont need the tofu, and the butter is what my palate was missing for the corn and broth. My hubby and I each lunch here quite frequently.

From Yelp: Amu Ramen Bar is a breath of fresh air for lunch. Very tasty and way different. Lincoln has so many chain restaurants and sandwich shops my head hurts just thinking about it. I like a turkey sandwich as much as the next guy but I dont want to be forced into communism choices for lunch options! Amu Ramen offers pork, chicken, and vegan noodle options with such choices as Tonkotsu, Shoyu, Miso, and Tan Tan Men. If you visit you must try the homemade dumplings. Get there early though because they run out on busy days. They have inventive add-ons like half an egg and fresh garlic that can tailor your ordered Ramen to your liking.

Great place that adds variety to downtown food choices. Food is delicious, staff is super friendly and helpful. My first time there, they were more than happy to help a novice of Ramen Noodles and provide some recommendations. Dumplings are delicious and only real complaint is they disappear too quickly. Atmosphere and aesthetics are nice as well and use of wood throughout establishment gives it a unique feel. One side comment that is pure personal opinion/perception, and is no reflection on the food or service, is it feels a little hipster-ish. That being said, still great food and place to eat.

better ramen compared to others in omaha, ne. ramen in omaha costs about $15, here 8. coming from growing up eating jp ramen in jp, i noticed lemon citrusy smell from tonkotsu ramen, which u will never smell. It could be from Polk belly seasoning or bamboo seasoning, but not great mix. I also noticed that cook forgot to stir noodle while cooking it. It was rather cramp though they have better noodle. Over all, better price and better ramen, so its the place i would go back to if i have choice. I wish it was in omaha.

The bowls, sides, and beverages here are all phenomenal. Yes, if all you ever order is orange chicken then the menu will seem small and scary to you. Yes, Ive had to complain about the one new waiter/ress that wasnt doing a good job. Those arent reasons to dock stars though, those are realities... The menu is how it should be and the staff is by and large a group of very polished, professional adults. Id give 6 stars if it were possible this place is so good. YOU WANT THOSE DUMPLINGS

D and I tried this place today after wanting to visit for a while. We both got the tonkotsu ramen and tried the dumplings. The dumplings were in a tasty sauce but the dough was quite thick. The ramen broth was fairly flavorful, but not as much as expected for tonkotsu. We both agreed well give it another shot but will try the miso or shoyu next time. It was a nice place overall. The ambience is especially fun and the staff are very friendly.

Their bao looks exactly like Bao Haus in NYC. Would definitively suggest the pork one. The tofu one was very garlicky. The Spicy Miso Ramen was not the best. The soup is very oily so next time would definitively asked for more broth than oil. The noodles were not well cooked so had to leave it in the oily broth a few minutes. Unfortunately this is the best you get as far as ramen unless u buy the Korean package in the supermarket.

Went here a few months ago on a date night with the husband, it was an alright experience. I was expecting a little more of a selection but what I got was really good, but theres billions of kinds of ramen. The college (high school?) kids that were working were far more interested in theyre conversations then our orders. I shouldnt have to wait for the end of your chat to take my order and they could have been friendlier, just sayin.

Authentic style Japanese ramen, udon, and appetizers. There are authentic dishes on the menu including Tonkotsu pork and pork belly. My brother who lived in Japan for a year said it was very similar to what hed had there. The spicy veg miso was very good, with a miso broth but ramen noodles. Restaurant was clean and service was great. Very enjoyable meal and atmosphere! They also serve drinks and have lemonade made in house.

Oh my. I cant get enough of this place. Extra pork belly please!!! I love that I can come in. Seat myself. Order my food. Be smashing in less than 5 minutes! Service is OK but this place isnt about the service. If you want for sure seating get there at 5 or shortly after when they open. Highly recommend anything on the menu and the cucumber lemonade!!!!

Their Tan Tan Men I had was good taste. The taste was a little different I expected before I ate, but I was satisfied with their original ramen noodle. The staff also were very gentle and nice as well as their service. Tan Tan Men has usually made with Udon noodle but they told me they could cook Tan Tan Men with ramen noodle.

I enjoyed the Tonkotsu ramen very much. The cucumber lemonade was refreshing and light. The dumplings were pretty disappointing, tough skin, and came out after our ramen even though we ordered them as an "appetizer." Overall, I want to see and taste more of what they have to offer!

Been dying to try this and finally got the chance. The Ramen is thoroughly good. I had the Tonkotsu and my companions added the #4 (I forget the name), both were positively received. We also had the dumplings but I wasnt a big fan. Finally a ramen place in Lincoln.

Pretty good ramen. Not completely authentic, but best you can get in Lincoln, NE. Homemade dumplings were decent to try. Only gripe is I wish my dish was hot. It was warm, but if it were hot it would have increased my experience much more.
