Fantastic food and pastries, love this place!! Having said that, their espresso drinks were far from being on par and were a real dissapointment for anyone who is a regular drinker of good espresso. To the owners, please take this as constructive critisism. The first latte came out looking like a cappachino with a lot of stiff foam on top and not the velvety microfoam that it should have been. The flavor was also bitter so I returned it to the young lady who prepared it as she proceeded to argue with me about how they do it there defending the the drink that she had not even tasted. I asked that she try again which she reluctantly did. I watched the process this time and could tell immediately by the way she was pounding on the the tamper like a jackhammer she was not trained properly. I then actually timed the extraction which was a mere 14 seconds of pure blonde espresso pouring out of the portafilter. Obviously the grind wasnt right and was too course combined with the unorthodox tamp which resulted in the poor shot. More indications she had no clue what she was doing is when she removed the puck from the previous shot, she didnt wipe the potafilter clean nor did she flush the grouphead. And where do I start with the steamed milk? She introduced the air the entire time hence all the stiff foam she had to hold back the second time with a spoon. The drink was also piping hot and lacked that sweet lactose taste. My guess by seeing how long she steamed the milk in the first place is that it was probably in the 175 - 180 degree range which is way to high for a latte. When you go to a well respected French bakery like this is and for good reason, you dont mind paying more but you also expect the staff to be properly trained on the espresso machine. Now I know I have been very technical with my critisism and observed more than what the average latte drinker would take note of, but she didnt get one part of the process correct which compelled me to write my first review ever. And quite honestly, I was put off by her attitude but I also would like the small business to be aware of it so they can take corrective measures and improve their fine products for all to enjoy.

We found PB Boulangerie Bistro last summer and will be returning again and again ! My boyfriend and I stopped on our way to Marconi Beach to get some chocolatines (chocolate croissant), they are mouth watering. On our way back to the condo, we decided to stop by for a late afternoon drink and bite. Their dining room was already all reserved for the night, but they accommodated us by sitting us at the bar. That is the best place to sit in my opinion, because you can observe the cooks and all the busy work that is taking place in their beautiful kitchen. The hostess was wearing a beautifully fit suit and displayed lots of professionalism, charm and attentions. We had the pleasure to meet the chef and twice he came to offer us personnally his creations, chefs compliments. Ill never forget his soup, consisting of mainly tomatoes, smoked on apple tree wood. Their cheese platter was already beautiful and complete, but the chef insisted on adding another jam his mother had made, to go with the cheese of her making. Love of food and entertaining is in the air, and so is beautiful music notes coming out of a Barban Organ, on which they play once in a while during the night. This has been my best restaurant experience on beautiful Cape Cod so far, and I cant wait until next summer. Or maybe I wont wait and come all the way from Montreal next weekend to pay them a visit.

PB BOULANGERIE & BISTRO in Cape Cod is an EPIC place to dine!!! If youre in the Cape, you MUST MUST MUST check this place out! First and foremost, the Chef is AMAZING! He seems like a very warm and happy guy whom loved talking to us and figuring what kinds of flavors we liked. All to which he then made my friend and I a special dish, due to the limited vegetarian selections, that was then served to us in a marvelously elegant presentation. You can see that this man is passionate about food and people. The staff is so warm and friendly, too. They really know their food, -and their drinks! I absolutely loved the ambiance: the decor, the wares, fine details, etc, and the music. It is as though you were teleported to a bistro in Paris. I also REALLY appreciate that it is a thoughtfully designed restaurant having an entire open kitchen panorama juxtaposed to the seating areas. The staff is also genuine and offers VERY exquisite service. (Btw, the Bartender is an extremely handsome but dapper surfer guy, with great hair, who seems to have been taken right out of a romantic comedy -just had to throw that in there). Upon leaving, we were then given delicious fresh baked baguettes to take home with us, to to relive the memory the next day. A delectable three course meal, full of fine wines and cocktails - only $47 per person! Well worth the 30% tip we gave!

The lines outside are misleading. When we pulled into the seashell paved parking lot, I thought wow this place must be good, I mean look at all the people waiting to order. After waiting in line for half an hour i realized, it is just the slow service which is surprising since there are a handful of people working behind the counter. Once inside, the area is small and cramped. A few counters display cheeses and the items de jour, usually sandwiches and salads. Behind them are a shelf or two of breads. Other than that there are some teas, coffees and juices that you can purchase before making your way to the cashier. Theres some seating indoors and out. The outdoor seating is spacious but the tables and even seats are dirty. There doesnt seem to be anyone busing them. If you need a quick bite, stopping here wouldnt be the worst option. We took our food away and brought it to a vineyard to enjoy in their surroundings instead. I wouldnt go back here when there are other options on the Cape.

For the past five years, my grandfather and grandmother have had reservations at the bistro to celebrate their anniversary. (now 46 years) My sister and I have joined them for the past two years. They say by us being there, it is even better! To the point, they say the chef is simply the best. Meaning his food and his personality. The best part is getting to see the chef cook your meal. He does it so well, that it pleases us to talk about it afterwards. Then we all can see the happiness in each others faces by the end of it all. My grandparents go two-three times a year only because driving time is two hours each way. (otherwise theyd be there more often!) In the future, they look forward to going to Sunday brunch. Happy, happy, happy! Ill end this by saying the manager William is the best! He satisfies all of our needs. Every time we go, the chef takes time to have a picture taken with us. Service and food are absolutely wonderful! Well worth the trip to Wellfleet. Highly recommend it!
