I hate to leave a bad review, but I did want to warn other about Shimura Restaurant in Fountain Valley. The first time I went to Shimuras was in the mid 80s and at the time, it was a great place to dine. Today, I was craving Japanese food and Shimura popped into my head. Feeling nostalgic, we went there... what a HUGE disappointment. First off, in all fairness, the service was good. The waitress lady that other reviews talk about is very nice and sincere. Their food was another story. I ordered the combination #13 which was tempura, chicken karrage, and beef teriyaki and my wife ordered the sashimi dinner. Combination #13: The tempura and miso soup was good. The beef teriyaki was so rubbery I couldnt eat it and the teriyaki sauce was so bland that I had to resort to using soy sauce. The chicken karrage was a joke. The meat was so dry and favorless I had half of one piece. Same for the salad. Sashimi dinner: All the fish that came on the plate was far from fresh. I was appalled to see that a Japanese restaurant thats been around for so long would even consider serving fish of such poor quality. Honestly, canned tuna would have tasted better than their "sashimi" grade tuna. The snapper still had some skin left on it. Salmon was terrible! I actually think it was very close to being spoiled. Lastly, the ginger / cucumber side dish that comes with every meal was dry, old, and like someone else on Yelp stated, smelled of mildew. Overall, it was the worst dining experience Ive had in a long time. When I go into a Japanese restaurant, I expect a certain level of quality and even if they fall short, Im pretty forgiving, but todays experience at Shimura was so horrible, I had to write this review so that others, especially first time sushi eaters, will avoid a disappointing experience.

My wife and I go to Shimura often on the weekends. The sushi here is the best in town. If you are looking for authentic Japanese food, then you will find it here. What you wont find is Americanized sushi or the "Volcano/Crunchy/Caterpillar Roll" that comes with a side of Flaming Hot Cheetos. If your idea of sushi or Japanese food is Tempura and a California roll, then youll most likely be miserable and are probably better off going to Georges Sushi Hut. When you are there make sure you ask George if can put together your chopsticks with the wrapper and rubber band. The fish quality here is also very good. Please ask your server or sushi chef if they have anything special in season, as it really depends on whats best during that time of year. As far as the ambiance is concerned, if you are looking for a quiet evening out, then I would recommend sitting at a table, but if you like to mingle and see what everyone else is eating then I highly recommend waiting for a seat at the sushi bar.

Did not really feel welcomed and got the vibe that I was a bother after waiting to be seated after 15 minutes, the look the employees were giving me, and the place was pretty much empty the time when I came in. So I just left to get sushi somewhere else.

One of my favorite sushi restaurants. Great selection of fish (much mote than most places). Been coming here for over 20 years!!!! Traditional in their approach. I highly recommend it.
