Quelle délicieuse interlude gustative ! Lorsque lon fait un road trip aux Etats Unis, les occasions de bien (très bien même) manger sont rares, et nous avons été ravis par la cuisine du Cirque. Le cadre est très beau et le restaurant donne sur les fameuses fontaines de lhôtel. A Lintérieur, lambiance dun cirque avec des peintures aux murs et les toiles formant un chapiteau au plafond. Les serveurs, sont très gentils, à lécoute et viennent expliquer lensemble des plats (normal me direz-vous dans un restaurant gastronomique). Côté repas nous avons pris le menu dégustation à 135$ (nous fêtions notre anniversaire). Nous avons commencé avec un velouté en amuse bouche au mais, très bon et original. En 1è entrée nous avons pris le homard et les tomates avec la Burrata. Les quantités sont généreuses, surtout pour du homard et cest vraiment bon. Nous avons continué avec le foie gras poêlé avec des prunes, un délice !!! Ensuite nous avons goûté le bar et le cabillaud. Le premier était cuisiné avec une sauce au pinot noir, qui avait un léger goût sucré, le second avait une fine tranche de pain grillé sur le dessus et était accompagné de ratatouille. Les 2 poissons étaient tendres, parfaitement cuits et lensemble du plat très harmonieux (jai tout de même préféré le cabillaud). Pour la viande nous avons tous les 2 opté pour le poulet qui était également très tendre. Un pré-dessert pour annoncer le dessert parmi un vaste choix : jai opté pour la boule en chocolat et praliné qui était excellente, mon ami a choisi le soufflé au chocolat qui était énorme et un peu trop sucré à mon goût. A la fin du repas 2 truffes dans un très joli écrin nous ont été offerts. Nous avons vraiment très bien dîné, toutefois je mettrais un léger bémol pour le niveau sonore... Le restaurant est vraiment bruyant ce qui est très étonnant pour un gastro !

DO NOT EAT HERE IF YOU WANT TO MAKE IT TO YOUR SHOW ON TIME. When we spend over $700 for a fancy French dinner, there is an expectation of extraordinary service. However, altogether they were INCOMPETENT, and as a result, WE WERE LATE FOR OUR SHOW and MISSED THE BEGINNING. We arrived when they opened at 5:30PM, and we were asked at least twice whether we were seeing a show. We had tickets for the 7:30PM show located in the same hotel, and they were aware of this from the beginning. When we were seated we were offered the regular menu, and we had to ask for the pre - theater menu, which made us believe that we could order off of either menu. Some of us ordered from the pre - theater menu, and others ordered off the regular menu. Our main course arrived at around 7PM, and it could have tasted good if we had time to taste it. Instead, we had to eat quickly, so that we could make it to our show on time. We got up to ask for our check at 7:15PM. We thought about getting our desserts boxed to go, but we naively believed that dessert would come shortly. One of the wait staff wished us to enjoy the show, but we had not even received dessert yet. At around 7:25PM, we were stuffing dessert down, and then we rushed to the show. However, we were late and missed the beginning of our show because of their incompetence and lack of care. They should not offer a pre - theater menu if they cannot serve a 3-course meal in a timely fashion. Vegas shows have regular start times, and they should know better. There is no good excuse! This was a special occasion, and it was ruined. Some of the wait staff were friendly, but others snubbed us, probably because we didnt order alcohol or because we were Asian. They didnt even apologize for their slow service and underplayed how late it was, and their lack of acknowledgement of the situation is disrespectful. I would never recommend this restaurant, and I would highly recommend AGAINST it for such poor service.

Went here for dinner on my own a couple of nights before a work conference. It was a saturday so I booked a table on opentable a few days before without any problem. Started with canapés, a very light foie gras and opted for the a la carte menu. Amuse buche of chestnut cappuccino with Lardon foam and spicy bread was a good hint of things to come. Opted from the choice of breads for bacon bread and the butter is worthy of a mention too, very good. Had the soft poached egg and caviar with smoked salmon, potato and Creme fraiche for starter which was excellent, well balanced with the breadcrumbs on the egg were nice and crisp. Main was Paupiette of sea bass in thin potato slices on leeks with Pinot noir reduction, very good. Fish was well cooked and the potato on the outside was nice and crisp. Took a little while to decide on the dessert but had a good chat with the waiter (who correctly guessed and wrote down my choice before I said it!) opted for Crème brûlée which was a little too sweet and too gelatinous but generally of a good standard. Petit fours (4 of them) pastry excellent, caramel crunch a bit thick on profiterole (being very picky here and the other 3 were faultless!). Chablis at $15 a glass was very drinkable. I was done in little over an hour. Some excellent looking soufflés being served for dessert. Service overall was excellent. Like the decor like a big top and could see bits of the fountain regularly too even though I was sat at the opposite side of the small dining room to the windows. Tables by the window would be excellent for a special occasion. Will definitely be going back next time Im in Vegas to try the chocolate ball or one of the soufflés. Total was around $130 before tip and worth every penny.

Amazing in every way: food quality, taste, presentation, and uniqueness of dishes, service, and ambiance. All were five stars. In our top three restaurant experiences ever. One of the benefits of living in Las Vegas. We ordered the five-course pre-fix ($135 to start). Fabulous! The yellow tale appetizer was incredible, both in taste and presentation. It might have been my favorite if not for the divine truffle risotto. The best risotto ever and one of the tastiest dishes in my life. I am a risotto lover. My wife, the foie gras lover, said it was truly the best she’d ever had. That is a huge endorsement. The potato wrapped sea bass and chicken were good but totally overshadowed by the earlier dishes. The palate cleanser before dessert was interesting, unique, tasty and effective. There are no words that I can conjure to adequately describe the incredible desserts. For us, a new standard that may never be equaled but often dreamed of. The service is what you’d expect: prompt, knowledgeable, friendly, helpful, personable and very professional, truly five stars. Each of the staff was excellent in performing their duties, truly excellent. The price: If price is an issue, this isn’t the place for you. The tip was equal to our normal nice dinner out. Thank you to the entire staff for a wonderful experience.

Eating at Le Cirque has been something my friend and I have wanted to do for some time, and when the opportunity arose I was very excited to be dining there. My friend and I went with the tasting menu with the wine pairing, which included some of their most famous dishes and some great wines. Dishes on the menu included: oyster and cavier, lobster salad, foie grais, mushroom risotto, paupiette of seabass, waygu kobe beef, chocolate souffle, petite fours. As well the paired wines were expertly matched to the dishes. Although it was all very good and you were catered to like a king there were some sour notes in the meal. The atmosphere was not what I expected as there was a loud table that esculated all conversations in the room to yelling matches. The biggest disapointment was when the bill arrived and we had been billed $65 dollars each for the 2 one inch pieces of the beef. I understand that the beef is very expensive but I believe the waiter should have informed us of the price instead of assuming that we were aware of any extra cost. In the end I can now say Ive eatin at one of the worlds best restuarants and have broadened my knowledge of fine dining. I would recommend the $90 Craftsteak tasting menu with wine pairing over this menu but it is an experience to be had by food lovers.
