food: brisket poorly trimmed but tasty and tender. chicken and pork meat unedibly dry, but extensive fat in pork - gross. dog was able to choke it down - garbage. slaw with vinegar saturation causing choking - garbage. sweet potato fries disgustingly undercooked - garbage. canned cheese? - garbage. cajun fries salty beyond belief - garbage. i feel robbed of nearly $100 spent here today. dining room: poor ventilation: walked into an inescapable cloud of thick smoke - gag, cough. dirty and grimy, like the public bathroom where youre not gonna touch anything. unfriendly staff: every kitchen person gawking but not one greeting (including from the owner) and no thank you or have a good day, you know, basic level I customer service. i see in reading other reviews (which i am astounded by the 4.5 avg) many similar problems / critiques so in 2 years this establishment has improved not at all. while Matt / staff seems to believe "based on many positive reviews we are doing a great job", they are clearly not interested in addressing the shortcomings, only basking in the self-perceived glow of good reviews, which i can only surmise they write themselves. will not be sad OR surprised to see this business fail.

I ordered the 1/2 slab rib dinner with 2 sides, a coleslaw and a 3 cheese macaroni and cheese to go. The ribs were picture perfect. I loved the sweet barbeque sauce that glazed the top of the ribs. Because the ribs are smoked, they are not fall off the bone but they were certainly tender and meaty. Be aware that the 3 cheese mac and cheese is SPICY! The menu should alert customers to that. I fear that adults will order the side dish for children and the child is not going to eat it because it is so spicy. Both my husband and I could not eat it because it was too spicy for us. The workers really hustled to get the orders out. It did take about 20 minutes to pull my order together so be prepared to wait. Prices are average for a barbeque restaurant. I will return to this restaurant.

Although the food was decent. They used nacho cheese sauce for the mac & cheese which I found repulsive. Even more repulsive was the service. I received the worst customer service of my life by none other than the owner of the restaurant. I would never sent a friend or family member tot his restaurant in fear of having them feel the wrath of the owners oversized ego issues. It was despicable.

The Angus/chicken burger was AWESOME. The hotlinks remind me of my Dads. Lotsa fries to dip into the different sauces (Chicago sauce is a sweet tangy mild sauce) If youre really hungry AND really cheap, then get the Pulled Pork Fries platter. Its HUGE and perfect for a couple that needs Hangover food. A beer to wash it all down & everyones happy happy happy.

Food was delicious with good serving sizes. Didnt think i could finish the "Southsider" sandwich at first, but it was so good that i finished it before i realized it. If you like BBQ, this place is great! My only complaint...tables were sticky. Would have been even better if my sleeves didnt stick to the table. Grossed me out just a little.

Just plain love this place! Weve been coming here for the better part of the last year, and its just great. Staff is friendly and move as fast as could be imagined considering the huge amount of patrons that visit here. The pulled pork cheese fries is, without a doubt, am amazing meal all to itself. Highly recommend it with the bacon.

Dont bother calling in your order. They might or might not answer the phone. If they do youll get put on a galactic hold. Had to drive over after 20 minutes while on the phone. I told the girl to please answer the phone because Id like to place my order. Food is awsome but calling is a waste of time, for everyone.

Firewater is awesome! Pulled Pork fries are massive and everything Ive tried has been delicious. Ive been eating here for a year now. They can get really busy on the weekend but even regular days you need to give them the time to properly make the food- this is not a fast food restaurant.

For my $ it is the best BBQ in the area and they have a limited amount of craft beer as well. Sauces are excellent. Fresh cut french fries. Excellent brisket and the wings are my favorite. Smoked with nice crisp to the skin and served with no sauce directly on them.

Went there for my first time last weekend. The portions are huge and are the best food. The pulled pork fries with bacon are a meal on there own. The ribs fall off the bone and taste so good didnt even need sauce for it. Kids meals are even big

Honestly. Best BBQ in the area!! Has been since they opened several years back and the quality has never changed! Favorite thing? Hard to say. Depends what youre in the mood for, but their multi-meat sandwiches are phenomenal!!

Rib tips were delicious!!! Sides were avarage.. Very small portions of meat on their sandwiches.. and after ordering 3 dinners that came to over $40.. they wanted to charge for cups of sauce.. (sauce was delicious though)

Best barbecue in the suburbs. Great, family owned and operated place. Friendly and fast. Used to live nearby when they first opened, but still drive back 50 miles for dinner once in a while. Worth it every time.

New management put this place on the map! Ive spent extensive time throughout southern US where BBQ is borderline heavenly. Fire Water embodies that culture and their turn around success is proof of that.

The ribs are amazing they give you a whole lot of fried and I love the slaw and all the different types of sauce you can put on.me and my husband and 5 kids go there 1 time of month. I love this place.

Love the ribs, great flavor, little bit sweet. Just right. I have occasionally had a rack of ribs that was just a little dry. And not quite fall off the bone. However the flavor was still good.

BBQ is spot on . . . some of the best BBQ in Chicago . . . and this is coming from a guy that lives in South Carolina . . . their sides need a little bit of work but the BBQ pork is spot on

Visited today and the brisket was very dry and tough which was disappointing. 3cheese mac was really good. Hopefully their others meats are better but stay away from the brisket.

Had the pulled chicken sandwich and it was AWESOME! It was smokey inside (eyes were burning a little) and they didnt have any beer on tap, but it was tasty and service was good.

Always perfect brisket (try the pretzel bun) and the best sauces anywhere. The only place Ive had better BBQ was at Chef Ivos in Galena IL. which has unfortunately closed.
