Simon is doing something REALLY special at the Coffee Lab. He brings in the best beans throughout the country (and even in Canada!) and expertly brews and crafts drinks. He definitely knows what he is doing, and has changed my entire approach to coffee. He LITERALLY changed my life, and I know that sounds hyperbolic, but it isnt. I truly think his coffee is some of the best in the city, hands down. To address some of the less than excellent reviews below: first of all, a business owner can choose how to serve their products at their discretion. Simon is dedicated to the art of coffee; that means that if he hasnt figured out how to dial in a particular espresso shot, he will not serve it. Likewise, if he doesnt think that a certain bean goes well in milk, he wont serve it with milk. He is unbelievably precise in his dedication, and wont serve a sub-par product. If that means not serving milk with a pour over, people should definitely deal with it because in this regard, he definitely knows best. If youre looking for a cafe that will let you add 50 different flavors, choose from 30 different milks, load up a finely brewed cup of joe with whipping cream--this is NOT the place for you. There is a place for you, and it is called Starbucks. If, on the other hand, youre looking for an exceptional experience and a coffee that will make your entire day better, head over to the Lab.

Great commitment to excellent coffee. Every shot, pourover, and capp is an exploration of flavor. Its worth drinking the espresso how he pulls it - hes specific about how its layered, so taking it to go would ruin the experience. Same with the coffee - lots of subtle flavors abound, so if youre going to pay the price it costs to make coffee with these beans, try it without masking the flavor with milk or sugar. Overall, Im happy to come here daily and have been for a good year.

Best coffee on campus, hands down, and some of the best coffee in the valley. Simon does a great job selecting a nice variety of local and out-of-state coffees each week. Its obvious he cares tremendously about his craft, and he ensures that each cup he serves is perfect. I get coffee here multiple times each week, and I highly recommend Coffee Lab to anyone. Give it a try and you won’t be disappointed.

Heard good things and decided to give it a try. Although the lab is hidden away at the University of Utahs pharmacy school the trip was well worth is. Simon (the owner and employee of Coffee Lab) is very friendly and knowledgeable about coffee. He takes his craft seriously and it pays off. The cappuccino I had was perfect. If you love coffee, dont pass this place up!

So 8AM trying to get coffee with a shot of espresso. He refuses to make the espresso because "this is a to go order and you cant take espresso to go" then refuses to give me milk in my coffee because he personally doesnt like to put milk in coffee. Ive never received worse customer service in my life. This was the most rediculous experience of my life.

Best coffee on campus. Simon has a well thought out philosophy for how he prepares his coffee (quality dairy products only and no sugar) which is not my normally preferred way (a dash of soy milk and honey), but I appreciate his style and am glad hes trying something new. The coffee itself is some of the best Ive had in the valley. Well done.

I actually used to like this place a lot, simply because he literally pulls the best espresso shots you will find in Salt Lake Valley. The unicorn latte he makes is also really great! However, after he refused to serve me scotch with my coffee today, I think I really hate Simon.... guess the coffee is still O.K. though.
