Shuya Cafe de Ramen, definitely goes a different route from most of ramen shop in NYC. All the ramen shop I have been to recently have adopted the shock and awe style of ramen soup base, which is the thick base pork broth, Tonkotsu broth and its variations. Shuya ramen broth is made from chicken and fish, it is lighter and the flavor is not as over the top as with Tonkotsu. Don’t get me wrong, I like shock and awe. However, this lighter broth is definitely #1 at this moment in my ramen repertoire. You see in order get such a high level of glutamic acid “umami” in most Tonkotsu broth, chef used MSG in their broth. Though I did not chat with Shuya Miyawaki the chef owner, he did have some tricks in his sleeve. It took me 20 mins to park, eat, pay, and drive away. It was a surgical strike lunch at 3:30PM, such is life of a work from home dad these days. How do can such a light broth complete with umami bomb of Tonkotsu broth? By the way Shuya broth does not have MSG in it, it Shuya Miyawaki pride. The both have clams and BBQ pork in it, that’s the secret I think. The clams and salt water in the clam added some depth to the broth in refreshingly light way. The grill Chashu, most for Chashu for ramen are stewed, is grilled at a high temperature what left deep char mark on the pork. The browning of the meat, Maillard reaction, added so much depth and umami to the broth, it was just spectacular. I would have shaken the chef hand, if I wasn’t in a rush. He really did a lot work in figuring out how to make a light non-pork broth works without MSG.

A nice ramen shop in Astoria with great service and a laid back feel to the atmosphere. Its a neighborhood spot for ramen and they provide some nice meals. My go to were the fried chicken which was crispy and juicy with a soy glaze. I also had the pork mazemen. The ramen noodles were soft and chewy the way i liked and had a nice thick noodle to soak up the pork sauce. Very satisfying. Their seafood ramen was also you could tell very fresh. The broth tasted of the sea and is very light and not heavy for a meal. Clams fit well with the ramen as a whole. Nice spot, ill be back.

My boyfriend and I are determined to eat ramen at every place in Astoria. Weve been to almost half a dozen and Shuya is honestly the most enjoyable. Completely unpretentious in its decor, food and mood. I would 100% recommend for anyone looking for a "hidden gem". The server was EXCELLENT and generous with her attention and solicited recommendations. The buffalo chicken appetizer and fried brussel sprouts were the MVP of the meal and I think I could just eat two orders and be perfectly happy. The sauce on the latter is stellar. Happy eating!

Overall, the ramen is good. Noodles arent the best Ive had in nyc and the broth is a little salty. However the Shuya ramen that they offer contains two top neck clams, two squares of seaweed, two pieces of roast pork, and one flavored egg. The roast pork is exceptional, not the normal roast pork that is usually served but this rendition is grilled and you can taste the smokey grill marks on it. The service is good and the ambience is open.

Love the chefs aesthetic and attitude. Hes almost a one-man show, producing some of the ceramic ware for his dishes. He always comes out to greet my table, and its not too busy here. Have seen Japanese guests at the store. There is definitely room for improvement, but this is my favorite wavy ramen in the city right now. Desserts and tea/coffee drinks are also awesome here. The atmosphere is great for designers.

Its one of the best ramen in NY. A very delicate and complex flavor, and the changing appetizers are really a treat. Try the dessert, in the summer they have the best shaved ice you can find in NY. The chef makes everything, and I think maybe he even makes the bowls and the chairs you sit on. Its a total chef immersion experience! Id drive a hundred miles for his ramen if I lived in another state.

Good little ramen shop in Astoria. While most ramen places in the West serves a broth thats more towards kotteri end of the spectrum, Shuya serves a decidedly assari style which I prefer. The use of clams in the broth adds umami. I do wish I taste the sea bit more though but this is NYC, probably too fishy for most people here. Noodles were to thicker and has a nice bounce. Quite enjoyable.

We were so excited when a ramen place opened nearby our house. This is the best ramen Ive had in Astoria. The pork buns are perfectly balanced with texture and taste. The green tea pudding had phenomenal flavor. There were 4 of us that went and we all got different ramen bowls. Each one was a flavor explosion! We moved back to the Midwest and will really miss this place!

Really kind staff and service. Broth was too salty for my liking. I got the Assari Yuzu Shio Ramen so I think the clam juice contributes to the saltiness. I liked the sushi of the day which was marinated salmon sushi ($6 for 2 pieces). The whole meal came to $40 for two after tax and tip. They only accept cash.

Cute little spot with the sweetest server, but better yet the Ramen broth is the bomb dot com! My server recommended the cremé brûlée type of dessert and I highly suggest it - sweet with the brown sugar sauce in it. Great spot for Ramen in Astoria. **FYI: cash only **

Great place, nice decor and delicious ramen!!!! The broth is extremely well done, and has a rich and healthy taste to it. The toppings are generous and the tea gets unlimited refills (of hot water, so the tea flavor gets diluted from 2nd refill onwards)

A good sign that this place is good is that all waitstaff can speak Japanese and there are Japanese customers. The ramen didnt disappoint though I would prefer softer noodle. The decoration is tasteful and resembles a cafe with minimal wood furniture.

This place is literally the cutes design for a small little cafe/Dinner. They made all there plates, tea cups and art inside. Good food for a couple of 2 average about $50.
