Why 5 stars? Because its as delicious as I would have hoped. --- --- --- Id had this spot on my to-do list for quite a while, but I just dont find myself in Downtown Tampa during the morning very often. Then these guys made on the Top 100 eateries in U.S. list for 2017, and I knew I had to make sure and get there ASAP. With a colleague in town and a busy day ahead of us, I finally had the ideal opportunity. We drove around the block a couple of times in an effort to find street parking, but this was more due to laziness. There were an ample number of spots about 3 blocks away, but I got greedy and tried to find some about a block away. Once we finally arrived, I found out it was *CASH ONLY.* Thats on me for not doing research. Fortunately, downtown is riddled with ATMs, and I stopped into the Regions building across the street to grab cash. The owner was very patient and let us wait until we were done eating. As for the food - the name of the business is appropriate, because they are like a firm of professional egg makers. I got a Cajun Frittata and it was absolutely delicious. One of the best egg creations Ive ever had. My colleague got something with goat cheese, which I despise, so I wasnt able to sample his, but he enjoyed it as well. If you live or work downtown, this is an absolute must for breakfast. Just dont forget your cash!

Excellent food and coffee. The menu is fairly limited but considering the fact that it is just one guy in a tiny food truck it is understandable. I got the Dylan Frittata and was very impressed. The ingredients were fresh, the eggs were incredibly fluffy, the seasoning was perfect, and the grits (which I normally dont care for) were delicious. I talked to the owner/chef for a little while too. Very friendly and interesting guy. He gives the leftovers away to homeless in the area when he closes at 11.

Wanted to go for a walk and grab some great breakfast today.... mission fully accomplished. Dylan the owner is fantastic and stayed open a full 20 minutes longer for the 4 guests that arrived right after me. I got the cajun frittata and it was excellent... the owner chopped everything up to order and even put in extra poblanos free of charge! Grits were great too. Excellent cheap prices as well... will definitely be back!

What an awesome food "trailer"! We found it by accident as we were walking and it just so happened that we needed some breakfast. Fresh ingredients, great prices! What more could you ask for? The owner/chef was super friendly and nice as well. Highly recommend this place if you are ever in Tampa.

I work next to it and I had to try it. Definitely deserves more than 5 stars. Fresh delicious hot and absolutely amazing. Definitely worth every penny. Things ordered not even on menu and he makes it if he has it. Thank you. Wow. Should have tried this place sooner. You need to go.

Excellent breakfast spot. Highly recommend! Food is great and Dylan (owner) is awesome. Walked by a few times before I tried it, was disappointed that I didnt try it earlier. If you are taking the FL bar exam, definitely recommend eating here before the test.

One hard-working guy in a food truck using fresh ingredients to make breakfasts. And its DELICIOUS! Soemtimes a little bit of a wait, but totally worth it for a fantastic breakfast.
