EDIT: in the six times Ive been here since my review, the consistency issue has been fixed and I am now giving five stars. original review is below. --------- I have to say, Im getting a huge kick out of some of the negative reviews- especially the guy who gave one star for them being closed on Mondays and thinks having a day off is a"trend." Extra lol. I can only assume that he himself is an extremely hard worker and never takes a day off, no exceptions. Anyway, on to my own thoughts: I enjoy this restaurant and I think the food quality is always high. Ive had the following: -Tenders, leg quarter, and breast quarter in hot, southern, jerk, and green chile. (I typically order the hot. Well get back to that in a minute.) Overall, Ive enjoyed all of the spice mixes for different reasons. I liked the southern tenders for their crunchy, juicy deliciousness. They are mild, crispy, and pair well with most of the sauces. The green chile is fascinatingly sweet and the jerk is flavorful with spices and yet very mild in heat level. -Coleslaw, fries, Mac and cheese, Baked beans. The Mac and cheese is creamy and has bell peppers in it. I think its delicious. The baked beans were baked beans, but nothing to really go nuts about. I like the coleslaw and usually order that. The fries are splendid. -all of the sauces. I like the spicy remoulade best. The house sauce is good too. The service has been typically positive and the employees have been helpful with the exception of one woman who responded with "you can get it yourself" when I asked for a fork (my bad, I didnt realize they were sitting out). She didnt ruin my experience or anything, so I didnt feel the need to make a fuss over it. Indeed, she did not affect my scoring at all. Alas, the reason that Music City receives four stars from me instead of five is inconsistency in the hot seasoning blend. I have had it six times. Its never even been close to consistent- truly is has been all over the map. There are times where its perfect and spicy enough to make my nose run and my lips burn. Once it was a bit light, but still flavorful so not a problem... And then there have been two times where it was literally like torture to eat- Its so hot that I swear they must have mixed it up with the hottest blend. It makes me sweaty and nauseous. My face feels like its going to explode. On one hand, I dont want to send it back (since, you know, I was the dork who ordered it and yes I do understand that its supposed to be very spicy) and on the other hand, I kind of want to ask some pointed questions like, "did someone forget to label this spice blend and you took a wild guess?" Anyway, all in all, I enjoy the place, I enjoy the food, and I even get sick enjoyment out of hot chicken roulette.

The only reason I am giving this place 3 stars instead of two is because the quality of food was very good, but the first, second and third impressions dealing with the fellow at the register or ever too busy gal leave much to be desired. Eye contact, welcoming tone, and friendly recommendations on the sides, it seems like a perfect recipe for a great restaurant... instead it is feeling rushed, hurry with the order, heres you wooden block...dont find us we will find you! NEXT!!! Sad really when you think about it, because this business model is built off the register, and if you dont impress at the register then the customer is off to the sea of tables and serve yourself portion of the experience. I love the model dont get me wrong its fast casual and tons of restaurants are built on this style of dining, but if you dont have the right staff at the front or make adjustments to accommodate the flow of traffic...the traffic eventually goes away. This was my third experience at MCHC with mediocre front service, and only reason I went back is for the chicken, that wont always be the case..dont fool yourself MCHC, this isnt the east coast where volumes of customers is plentiful, and front service can ride the practice of sub par service. I think you can strive for higher quality overall experience and really hope you make it.

Fantastic food. Seriously, the best chicken sandwiches Ive ever had, no question, full stop. If you have ever been to Chick-fil-A even once after this place opened up, I feel sorry for you. The sandwiches here are better in every possible way, even if you dont like spice. But if you like spicy food, hold on to your hat, because MCHC has the hottest, most delicious dry rubs short of dropping into Nashville itself. Their green chili blend is my favorite - its their mildest heat level, but the flavor is incredible and keeps me coming back for more. Their coleslaw is great, their sauces are fantastic, and they have an amazing array of side dish choices. Their music choice is always hip, and the vista is really cool and well laid out. The only reason I knocked a star off is that the staff is sometimes dismissive, which can make you feel a bit unwelcome, and occasionally the sandwich buns get a little dried out (depends on the day you go). These are very mild criticisms though for a place that has, hands down, the best chicken sandwiches in the state.

This is not fried chicken, it is Nashville style hot chicken. My mistake in assuming so, considering they are rated the best fried chicken place. Their chicken was boring and the breading was gummy. Parts of the chicken were undercooked. They do use a chili based rub on their chicken that can give a pink hue to it, this was not the case for the chicken I received. Waffles were a joke, same with their "fireball" maple syrup. Honey mustard sauce was pretty tasty. I appreciate that they use locally sourced chicken, but doesnt make up for the fact that the entire place gives off this pretentious yet I dont care what you think vibe. It was weird. Also, Im sure this makes me sound old but the music was really too loud. Dont get be wrong, I love punk music as much as the next person, but at a comfortable level in a food establishment. I really wanted to love this place, I truly did. I had been looking forward to eating here for months and am so disappointed. We wont be back and I would not recommend this place.

The staff is friendly and fun, owners Sam and Jordan are very approachable fellows and will bend over backwards to make sure that your experience has been good. The food is incredible, this isnt your mommas fried chicken, and I would advise working your way up the spicy levels before you dive right in. There are a vast number of sides and options, but I usually get the chicken tenders with waffles, "hot" or "jerk" and have never been disappointed. Beer and cocktail options feature a wide variety of Colorado local beers and liquors, and they are the only place in town with Shiner Bock on tap. The environment is relaxed and casual, without actual waitstaff and the alternative feel to the music and art is something worth the trip in and of itself. Sometimes they have cartoons playing on a TV too, so thats fun.
