Theres only one word to describe service at root down - amazing! We arrived 15 min early for our reservation. The restaurant was running behind so we waited a while and got seated 20 min past our original reservation time. We didnt mind the wait, especially since the restaurant was very apologetic about the delay and offered to comp us with dessert for our time. After we got seated, I stopped a waiter to ask about the restaurants specialties. He patiently explained the menu even tho he wasnt assigned to our table, and filled our waitresses in about introducing the menu before she came by. We ordered the lamb sliders and the scallops since they were highly recommended by the staff. Our food took a while to arrive maybe since both were entrees. The restaurant kindly brought us a small pallet cleanser to entertain us while we waited. Both of our entrees came at the same time. We started with the sliders and quickly chowed down the food. Then we switched our focus to the scallops and took a bite with excited anticipation...except we were caught off guard by the saltiness of the dish. The scallops were way too salty for our taste buds. I forced myself to eat the one on my plate but just couldnt eat the rest. I debated wether or not to say something to the waitress and decided to go for it. She apologized and quickly put in another order of scallop for us. Shortly after, the manager/owner came by to apologize as well. The second set of scallop came about 15 min later. They were better but still too salty for us. We analyzed that perhaps it was because root down serves good drinks..and food at restaurants with good alcohol tend to be saltier. We felt bad and really appreciated for the new order so tried our best to eat everything. At that point we had no more room for dessert and thus asked for the check. The manager came by to personally deliver the check and asked about the second set of scallops, offered to buy us dessert again and said since we dont have room for dessert, the scallop will be our dessert. We didnt understand what she meant until we took a look at the receipt - she didnt charge us for the scallops!! Honestly, last time we experienced such amazing, above and beyond customer service was at a Michelin star restaurant. We had an unforgettable experience at root down and def recommend the restaurant!

Just got back from our fourth visit to Root Down and it was better than ever. This was already my favorite restaurant but theyd really outdone themselves tonight. First, the food is phenomenal. Flavors unlike anything else Ive had and by a mile more delicious than anything else in this state. They just know how to combine flavors like nobody else. YUMMY. Second, the food is locally sourced and largely organic. This is wonderful, because I wont eat GMO soy, and as a vegetarian, that severely restricts my already limited options (if your soy is not organic, you can safely assume its GMO). We had the arepas and some kind of corn risotto, both of which were so fantastic that it would be almost an insult to call them just delicious. Between the four of us, I think we had one each of every main dish. The seed encrusted tofu was excellent but not as good as the country fried tofu they had over the winter. Everyone loved their food and it all looked amazing. My father in law could not stop raving about the salmon and how perfectly cooked it was. Tonight, one of our drinks took unusually long to arrive. We didnt complain, but the waitress comped it anyway. Shortly after we arrived, a booth opened up nearby, and we asked if we could switch. It was reserved, but they were so overly apologetic for not allowing us to move they gave us a free dessert! This was so unexpected and completely unnecessary. When we were done, a manager came by to apologize again for not allowing us to move. (It was NO BIG DEAL!) But it was my in-laws first visit and they said they wanted us to leave with a good impression, which we would have regardless. We dropped exactly $200 including a well-deserved generous tip on a dinner for 4 with drinks and appetizers, and it was worth every penny. The service was beyond excellent, and the food - well, there are no words to describe the explosion of the perfectly matched collection of flavors that is every Root Down dish. I love this restaurant.

We had some tickets to a show at the nearby Bug Theatre and came across Root Down when we were looking for a place to eat before. I would say the place is kind of hard to find, but that is only if youre looking for a restaurant sign and/or a building that looks like a restaurant. There is no sign (that I could find) and the building is an old gas/service station. The address however is prominent, so its not that hard to find. There is no parking lot, only on street parking in a busy neighborhood which makes parking somewhat of a challenge. Once you get past all this though Root Down is extremely good. We didnt have reservations for the Saturday night, but we were able to get a table in the bar with no effort. The bar and restaurant were very busy (90 min wait for the restaurant, nearly every bar table and bar full). We shared the 4 onion soup which could have used a little more cheese for my liking, but still was very good. I ordered the Buffalo Sliders and Ang ordered the Veggie Burger sliders. I was very impressed with both. The service and vibe here were both very good. Our waiter answered all our questions and made sure we were taken care of. I found it a bit interesting that the restaurant is in an old garage, but once inside, even in the service bays where the bar is, it had a very hip/trendy vibe. Pricing is a little bit high, but it looked like all the main dishes had a smaller portion available. Drinks were priced about average when compared to similar restaurants and were not watered down like Ive experienced at other places.

As a vegetarian of 15+ years, I have a list in my head of my top 10 veggie burgers (from my 500 plus sampled from all over the planet). I just changed ROOT DOWN DIA to my #1. Honestly, I know it sounds weird, but Root Down DIA is my favorite restaurant in Denver. I have never been to the non-airport Root Down, but it cant be bad if the airport one is so good. They have a great selection of draft beers, ciders that I almost can never find. But, let me get back to this veggie burger. I went in once, expecting to eat a crap bagel from Einsteins (because at the time I was not aware of the existence of the heavenly Root Down), and to my delight, I stumbled upon the Godly new location. I almost ordered tofu scramble, and I still want to 10 visits later, but I cant get away from the veggie burger. Let me tell you more. It has an option for a gluten-free bun (I dont have celiacs, but it lasts better and doesnt get rubbery if you save half for the end of the plane flight, which is nearly impossible). Then, the burger patty is the most amazing piece of fake meat I have ever had in my life. It is vegan, but not lacking anything, crunchy, zesty, soft, textured, so many flavors packed into a biblical patty. Then, the sweet jalapeno sauce, I would kill for. Then, some kind of non-mustard-y curry yellow sauce that makes the burger the cherry on top. I dont even know what to say. I have to go and book myself a flight to Denver right now. Bye!
