I am picky. I also rate on value. So cost per quality and quantity is important. Therefor I have to mark this place down slightly because they are a tad expensive. Also if you proclaim yourself as being a certain thing, you better live up to it - Slow food, etc. being prime - and it could use more artisinal ingredients on the menu. This place has a great atmosphere, if a very odd location. Its proximity to several large IT and other High Tech firms is advantageous, as is its nearness to a friends abode. I love the beer selection - very unique! Love the food selection as well - nice assortment. Now for the critique: First: The beers are nearly impossible to understand - that is they have names, but exactly what they are is not apparent. There is a large board with their names written in chalk - mixed in with guest beers. I am a brewer - and beer snob and had a very hard time with it. My friend is local and had a hard time understanding it. Then the servers seemed totally indifferent to the beer - no recommends, no explanations, nothing. It was like pulling teeth, and then they were condescending. I remarked on a beer being poured that had a beautiful red hue, and said it seems popular. I asked what it was. The answer was they are all different, there are many beers that have that color.... Well, I know that! Tell me what beers you have that are that color (Trinity especially). My answer was completely uninformative and not helpful for me making my next beer selection. These two problems are serious for a business - you need to inform. So the signage needs much improvement, and the servers need to keep up that informative attitude. It is especially important to a place like this where the beer is not your standard brewpub fare and has a more Belgian and French handcrafted aspect. You need to be tour guides. Now be aware and dont overdo that either. Lastlly almost all the farmhouse beers were out - save one, which one it was was not explained - again the servers kept that secret! It was horrible. It was infected with a wild something that made it phenolic to the point of it being an example of that beer fault. Band aid flavor is not acceptable in beer. Now some Belgians and other loose or farmhouse styles can have some phenolic character - it should never be the main flavor. When this happens to me - its composted! And I have made lambics, Saisons, fermented completely with wild yeasts from apples, and other fruits, etc. I know from what I say. Dont serve these. Ive found they dont even do well when cooked. Compost! Oh, and the cheese plate. Loved it, but where are the local Colorado cheeses? Had Maytag blue, Dubliner, etc. You should focus on Colorado artisinals - of which there are many! Even Dubliner is dubious - not really an artisanal cheese. And what about Belgian and French farmhouse cheeses?

Weve been to Trinity many times because theyre local. We usually are waited on by staff who think theyre cooler than us and like to let us know. Twice weve had a really genuinely nice server. One time I ordered a beer and they brought me the wrong one. I noticed as soon as I drank from the glass. Instead of making it right and bringing me the beer I ordered, they brought me two tasters - the beer I ordered and the beer they served me. Basically, they thought I was wrong and made a big point of trying to show me that I was. I tasted both and pointed to the one that I had originally chosen which was not the one they had brought me. They were all yelling behind the bar to each other saying they didnt know how it got messed up and looking at me like it was my fault. Seriously unprofessional. The girl behind the bar either poured the wrong beer or a waiter picked up my beer and dropped it another table. Whats the big deal? Then I saw our server taste the beer I had rejected to see who was wrong and he sided with me. Duh. I know what fricking beer I ordered and thanks for making it into a huge ordeal instead of just dumping and re-pouring. One time we received service with attitude all night. When we got up to leave, one of the hipster staff saw the shirt my male friend was wearing for a cool band and said, "oh, I didnt notice you were wearing that shirt." Then he was really nice (for the 2 more seconds we were there before we left.) One time I asked a question about some food on the menu because we had brought some friends there for the first time. The answer I got was, "its in the menu." Really? We were the only customers there. Sorry I was taking up your time by asking a question. This was your opportunity to sell something in the menu to my friends, but instead you gave me crap. Really - I like the beer here and the food is just okay (there needs to be some taste testing and adjustments to be made to flavor and pricing.) But, cmon staff. Quit with the cooler than everyone in here attitude and we may be life long customers. Right now Im taking a break from Trinity and trying other breweries in town.

We call this place The Preppy Hippie! If you can imagine a place where there was such a thing as pretentious hippies, this would be the place. Ive been here about 3 times and every time I go with the hopes that this time the experience will be better. I really really want to like it here. After my last visit about a week ago Ive decided there will be no return visit. Why?, you may ask?. First off, the feeling when entering the building is off-setting in and of itself. The only thing to sit on are their stools which cant be more than 6 inches in diameter. Im a small person but my butt is going numb in about 10 minutes after sitting down on those stools. Which would be a price Id be willing to pay if that were the only issue. The service is TERRIBLE! Tips are pooled so there is really no incentive to give great service when its going to all be combined and divvied up evenly at the end of the day/shift/week. I love getting to know staff at my restaurants/bars that I frequent and had hoped this to be one of our many stops but no one seems to give a care in this establishment. The only thing I can really say is going for this place is the food. THE BEST SLIDERS IVE EVER EATEN! so so good. The over all feel of the place is get in and get out. All I want to do when I walk in that door is turn right around and leave. That is the vibe - and has been every time Ive visited. And if the vibe and stools arent enough to boot you soon, this brewery closes super super early. So from now on Ill be sticking in the bars/restaurants where true to life,friendly hippies thrive - Old Co City.

NEVER AGAIN!! My husband and I went to Trinity on Feb. 21st after visiting UCCS with our daughter and a friend. I think this was one of the worst experiences weve ever had. Granted there was one woman to attend to the entire place, including the bar, a very bad sign. The restaurant was packed the whole time we were there, wonder why, maybe just beer swillers. We were there at an "off time" for lunch, arrived at 2 and didnt get out of there until 4. Why? It took an eternity to get noticed. The meal arrived 1 hour later, minus our daughters. No water ever did come until we were paying the bill. When I tracked her down after we had finished our lunch and still none for our daughter she laughed and said "I couldnt read my writing." When I commented that our Cobb salads were missing the avocado (a main ingredient as it only had egg, chicken, tomato and avocado, she shrugs and says, were out, no offer of a substitute or reduction of price. Again our daughters meal came 1 1/2 hours after we ordered and no offer of comping the forgotten lunch. I found the salad very skimpy. They were also out of root beer so my daughter ordered a watermelon soda she said was like cough syrup. I found having to go to a ladies bathroom labeled "outhouse" while staring into a urinal right in front of me to be a turnoff as well, after all, I didnt think I was camping but this place made me want to use a lot of hand sanitizer, so I might as well of been. The only good thing was the taste of the beer, that I would rate as high, but at $7 it should be mighty fine.!
