Ive now tried all the sushi places in Owensboro, and Fuji is the best. Its also the most authentic place that does not serve "yum yum" sauce(? This may be changing. I just am not a fan of large quantities of sauce on sushi. Brown sauce on the eel is my limit and otherwise the cream sauce is for lettuce salad and soy/wasabi is all you need for the fish, maybe a light sweet vinegar on the seaweed or octopus salad.) I love the ika salad and that extra effort was put into making pretty vegetable rolls. Fuji is the only place I am aware of that offers donburi (a full rice bowl topped with sushi fish) and boxed bento lunches with tenpura sweet potato. My mom bought me one as carry out for my birthday one year and the staff packed it into the plastic bento lunchbox she was giving me as a present. Thank you so much, Fuji of Japan, for making a special gift more special. To address complaints of other reviews: Yes, service is slow. I LOVE that I can talk to my date or draw in my sketchbook or just meditate over a pot of green tea without people coming to check on me every five minutes. I love the low lighting and natural wood decor. Its a dining EXPERIENCE, and they give you a choice between the noisy and theatrical hibachi grill show or a quiet booth for sushi and donburi. As to fish quality, I keep in mind that we are so far inland and fresh water salmon is always a best option, as is going close to when shipments come in or earlier in the business hours so the chef isnt worn out. If youve ever made sushi at home, you know its a tedious one person craft project and anyone can roll some mashed up fish in rice and nori but it takes an artist to make carefully formed, colorful designs like the chef at Fuji does. Still I love this place and it is definitely my sushi-ya of choice.

11/2/09 We ate at Fuji on Friday for lunch and the food was not good. We frequent Japanese restaurants and have not had any quite this bad. The sushi was smothered with a brown sauce that made it awful. Then, my order was supposed to be crunchy shrimp sushi and it was imitation crab they did not fix the problem when I told them. They said they would give me a free egg roll if I wanted. I can say however that our waitress was great. We will NOT be returning ever again.

Service that has neither bad nor good cannot overcome for food preparation. Soup and salad were okay. Maine Hibachi chicken dinner entree not so good. Chicken was cooked real tough and not completely coated with sauce. Vegetables on the other hand were not cooked enough and a few tasted almost Raw. Maybe I just came on the wrong night.

In spite of all the negative reviews, take them with a grain of salt. Im here for work and wanted some Japanese food. This place is great! Ive eaten at all the big places like Benihana and Kobe, this place is just as good. Prices are great too. Soup and salad were very good as was all the rest of the food. Give them a shot.

The food is superb! Weve eaten at a lot of different Japanese restaurants but this one is our fave!! I do wish the sushi grills were spaced a little further apart and they could use a little updating of the decor, but food & service is awesome!
