Absolutely fantastic experience. The entire staff was very attentive and pleasant. The bartender (wish I could remember his name) was super friendly, and we tried a variety of cocktails and all were perfect. Our server Garrett was personable, helpful, and always at right there when we needed him. Great job on his part with recommendations and descriptions from the menu. His manner was professional; but warm and friendly. The atmosphere was great, we were so comfortable and really felt like we were the only ones there. It wasnt packed but it was pretty busy. The food was over the top delicious. Everyone in our party ate every morsel we were given; joking about licking the last bits of sauce from the plate. I had the pork tenderloin which was subtly smokey and so tender - eyes closed savoring, pound on the table delicious. All in all we could not have been happier, and would recommend it very highly. Cant wait to go back!

Food Republic

Chef Christian Apetz (formerly of Hyatt Harborside in Boston) has taken over the wood-burning grill at the elegant dining room at the base of Beaver Creek Mountain in the Park Hyatt. The aprés ski s’mores on the patio are meant to hold you over ‘til dinner. So take it easy on the s’mores. You’ll definitely want to save room for elk carpaccio, followed by the wood-grilled Berkshire pork chop with vanilla cider-poached peaches. Actually, it’s a toss-up between that or an espresso-and-chile-crusted filet mignon or the pan-roasted Colorado striped bass with root vegetables, blood oranges and ossetra caviar.

This place has a vegan menu. It is not advertised on their website. The food is not cheap, but its fairly priced given the location. Wait staff and bartenders are very friendly and accommodating. I put "vegan menu required" in the note section on my open table reservation, and the hostess actually knew that when I showed up! Im going to type "vegan" a couple times so that other vegans and vegetarians can find this vegan-friendly restaurant if they are looking for a vegan or vegetarian restaurant in Beaver Creek. Vegan. Vegan.

A Private User

Took an hour and a half from the time we ordered to the time we received our food. A family nearby with young children eventually gave up and went home. We requested the steak medium and the scallops cooked nearly raw. We received overcooked to inedible scallops (rubbery) and rare steak. Rather than ask for a correction we just picked at it and left. Theres so many other fantastic places to eat in the valley. Stay away from this one.

The food was fantastic but the wait staff was very inattentive. Even with a reservation no one came by for a drink order for the first 20 minutes. The appetizers took 30 minures to come, we had to flag our waiter down for bread and more water, the entrees took 2 hours, and no one ever came to see if we wanted more drinks. So, 3 stars because the food quality brings the average up.

Great atmosphere, selection, and staff. Plus an amazing location. Of all the restaurant/bars in the area, this is my new favorite. And the bartender, I believe his name was Shane, made our visit beyond amazing. His knowledgeable suggestions and personality were a perfect way to experience 8100.

Everything we ordered was fantastic! 5oz filet mignon, wedge salad, parmesan creamed spinach, brussels sprouts, lobster mac and cheese (with TONS of huge chunks of lobster claw meat). This was one of our favorite meals from a long vacation in multiple cities

We enjoyed both carryout and outdoor happy hour dining. The food was pretty good and has a great selection. I found the people to be very pleasant. Its the perfect spot to enjoy an afternoon drink and snack.
