Came here with a friend and I for dinner and we were quickly seated. Luckily there was no wait. We decided to sit at the bar area so we could see the entire cooking process. We tried the pork belly buns and I had the Tondaku Green Curry Ramen. First to discuss the Tondaku Green Curry Ramen. I absolutely loved the dish. All the ingredients worked well. Not only was the dish tasty, but I love the aromatics from the dish. Throughout my entire meal I could smell all the aromatics from the ingredients and thats what really made this dish for me. The broth was excellent. It didnt feel watered down and it seemed slightly viscous. There were lots of flavor in the broth. I did think that the soup had a little too much oil. I would recommend skimming the top layer of the broth just to decrease the oiliness. I dont think that by skimming the top would take away too much flavor from the broth. I do wish that the shrimp was a little bigger. They could use a higher grade shrimp :) I highly recommend this dish. The pork belly buns These were absolutely amazing! Probably the best I"ve head since being in NYC. Much better in terms of flavor and how its cooked compare to Ippudo and Totto. They dont use the blow torch to cook the meat. They put it on the cast iron plate and "grill" it. In addition, from speaking to the cook, they marinate the pork belly for hours. Hence when they cook it, a lot of flavors are inherently within the meat. My only issue with the pork belly was the mayo. I felt like the pork belly had enough fat in it and the mayo kind of added to the "fattyness". I think they could have added something else to help cut the fat, for example a slice of cucumber. Other than that, I thought the pork belly bun was really good. The meat was tender, flavorful, and not dry. Not much thought was put into this similar dish at the other places. In addition, they were dry and not very flavorful at all. The decor of the place is fairly trendy. A place for hipsters. I think this place is a hidden gem in Chinatown for the curry ramen and pork belly buns. A friend has told me that their traditional tonkotsu broth isnt very good. The other places like Totto and Ippudo are better. I havent tried their traditional ramen. Overall, I highly recommend this place for their curry ramen and this place is definitely a solid 3.75-4 star place.

A breath of fresh air in Chinatown. As a lover of ramen and local resident, it is always a bit of a disappointment that my options have been next to none regarding a solid traditional ramen spot, until now. Bassanova Ramen provides a small but traditional ramen and mazemen menu with a modern, friendly atmosphere. The space is small but open. Youll enter off the street into a all white themed, basement level shop. A hostess will great you and either seat you or tell you have your choice -- very casual. Each far wall is lined with about four 2-seater tables and in the middle of the room is a large square 10-seater table with little books and trinkets. Very home like. The back will is actually just completely open to the kitchen so you can see everything. You feel like youre having dinner at a friends place. The TonkatsuWADASHI ramen was a pleasant very flavorful broth with very tasty noodles cooked to perfection. The richness of the broth and the powerful flavor were well balanced. The pork was really tasty and extremely soft, and was definitely the centerpiece of the dish. Of note, is that they serve matcha tea so drink up! That said, they typically serve warm matcha tea which is honestly the only fault I can find. I just ask them to bring it hot and all is good!

Its hard. I think one of reasons that I would come back to this place is because I prefer ramen over most mainland Chinese food, which is what most of the stuff is in Chinatown NYC. However, in comparison to ramen places, this place is somewhat unmemorable. Bassanova is one of the ramen places that brings in unique flavors to their ramen, which is what most of the trademark dishes are. Their traditional ramens broth is just alright and the ambience is just alright as well. However, Id come back because the wait isnt as long as other ramen places (e.g. Misoya) and I am not completely in love with any particular restaurant in NYC Chinatown either. Plz send love and suggestions. 5 stars = I would come back alone or often 4 stars = I would come back 3 stars = I would come back if someone else wanted me to; Id try another option first 2 stars = I would not come back even if someone else wanted me to 1 star = Why?

"Ramen place in Chinatown? Really?", is how I reacted the first time I saw this place only to conclude later that its not half bad. Ive tried the Tondaku Wadashi Ramen and Lemon & Black Pepper Tondaku Ramen. Both the ramens were great, except for that they had less broth ( or more noodles). Whatever the problem was, eventually you feel like you are broth-deprived! Wadashi ramen is a mix of pork bone and fish broth, but the flavour of the fish clearly overpowering. Youll like it if your a seafood lover though. Dont try the brussel sprouts here. It was extremely disappointing. Ambiance doesnt have any Chinatown influence. Its not the cleanest place either. Overall, go there just for trying out some piping hot ramen!

Loved this place. Our group tried 1 Garlic-y noodle appetizer and all three ramens. Fantastic. The spicy seafood one was good and we werent even big seafood or spicy fans. This spot is GORGEOUS-ly modern. The bowls are exquisite. The service was fantastic. They also have a Japanese toilet. Love them - hope they stay in business for a long, long time. Approx $15 / bowl. Few options if your party is picky (3 appetizes, 3 ramens - all noodles). UPDATE: 5 people, 5 different empty bowls. Seafood was spicier - citrus flavors for summer are for warmer days - think lemon chicken - truffle oil ramen was yummy. #1 on menu is the classic...but Id suggest something unique to this location.

Bassanova makes the best damn bowl of ramen Ive had anywhere. Their Tondaku Wadashi green curry ramen is all that and a bag of chips. Never thought Id hear "ramen" and "green curry" in one breath. What a lovechild. Those familiar with southeast Asian cuisine will find the flavors in the Tonkotsu green curry broth familiar and comforting. Also in the mix is a medley of grilled Berkshire pork, shrimp, zucchini, okra, bell peppers, and coriander. And the noodles? Their texture is superb, yielding, and with bite ($15; cash only). You havent had ramen like this. Service is tops, and theyre one of the few ramen places that remember me, even with my un-even attendance.

I did not actually have their ramen (although, after today, I will certainly be back for some another day). What I did try, were their Sizzling Hot Iron-Pan Stick Dumplings and their Congee Ramen. Yes, you read that right, congee ramen. The dumplings were fine. Not fantastic. Not at all terrible. A little mushy and under fried, but fine. The congee ramen, however, was very good. Consistency was perfect. Broth was delicious. Very pleasantly surprised by this surprisingly good combination. However, if (when?) you decide to head over there, make sure you bring cash, because they dont take credit cards.
