Since everything else in the area was closed on Tuesday, this was really the only place open that also got good customer reviews. I dont know whether the chef was simply having a very, very, very off day or whether previous customers really thought the food was good, but the food was REALLY not good. I ordered the chilled cucumber ginger soup and my boyfriend ordered the arugula salad with pancetta, bleu cheese, and croutons. The taste of the soup literally assaulted my taste buds: equally strong ginger and cucumber flavors with an indescribably bad acidic aftertaste, not to mention that the soup was stringy with ginger fibers. The salad was limp, with burnt pieces of "pancetta", and HUGE pieces of bread (the very same bread offered to the table) covered in bleu cheese. When I barely touched the soup, Thomas--the very nice, if not uninformed server--asked if I liked it. When I said no, he immediately offered to take it off the bill. For my entree I ordered the pecan crusted scallops and my boyfriend the rack of lamb (cooked to medium). I asked Thomas where the scallops came from--after checking with the chef, he said "New England." I wanted to ask where in New England, and were they live or frozen, but I knew that neither question would yield a satisfactory answer. When my scallops arrived, my heart sank. Sitting on my plate next to haphazardly chosen and placed sides of translucent and limp zucchini, brown creamed corn (actually, the best thing I encountered all night), and a cup-shaped mound of rice pilaf, were 6 tiny scallops--2 whose pecan crusts were half burnt and all of whose crusts were not actually crusts so much as soggy crumbles. After picking off the pecan junk, I found that my scallops were completely over cooked. My boyfriends rack of lamb arrived, and the medium- rare pieces definitely looked somewhat edible sitting atop a massive mound of garlic mashed potatoes and yes, next to the same brown creamed corn and yucky zucchini. Unfortunately, my boyfriend was so visually off-put by my dish that he found it difficult to want to eat his own food. When Thomas came back and asked me if the scallops were OK, I couldnt lie to the guy--I told him how bad it was. He spoke to the manager and again, kindly removed the cost (24$, by the way) from the bill. Never once though, did he ask why I thought the food was so terrible. And I have to wonder why the chef, supposedly CIA trained and a veteran in the industry, cant manage to put a decent plate of food together. Even as a new chef, Im aware enough to know that the plates we were served that night should NEVER EVER be served to paying customers, particularly at Manhattan prices. Living in NYC, Im used to over-paying for pretty decent food. But its insulting being asked to pay city prices for inedible food in upstate New York. Do yourself a favor and never eat here. The web site over promises what they actually deliver, and the veracity of the positive customer reviews are questionable if they think the Woulds food is anything approaching edible. Go to (fill in the blank)s Pizza. It absolutely has to be better than this place.

We were a party of 5 and arrived for our 6:30 reservation and the place was fairly empty. We were greeted and seated promptly and our waiter arrived right away. He informed us that we had to order quickly as it would be busy soon and he wanted to be sure the kitchen didnt get backed up. One of our party ordered the flatbread appetizer while the rest of us ordered the pork wontons. Our waiter informed us that the flatbread would take about 20 minutes (which was okay - we had bread) but brought the other apps right away instead of all together. As soon as the flatbread was delivered to the table (it was good) the entrees arrived. As soon as our plates were cleared the dessert arrived (which we had to order at the same time as we ordered our entrees). We were celebrating 2 birthdays last night and one of them was an 80th. No one seemed to care. One of the servers did take pictures for us, but all in all, the meal was mediocre and the service was not good. Since we had 5 in our party the tip was automatically added and we had no choice as to what we gave. Believe me, it would have been less than the 20% if we had one.

The Review before this by Mich Marie is completely slander. She worked at The restaurant for 3 hours and was let go because she was not able to work properly. This should not be a place where people that have worked and been let go can write a very disgraceful review. Unfortunately I am saddened to have to respond to this negative review. I was told about this negative article by one of my staff and he asked me to respond. Reviews like this hurt our staff whom works so hard. Was in the area and decided to stop in and check it out. Read the reviews and thought it would be good. Got there on a weds night around 7pm and it was dead. Ordered the food and it came semi promptly but considered we said we would take everything as soon as its ready and we were the only other table it was pretty slow. The decor was decent and but the presentation was mediocre and did not match the prices. The portions were decent but I would of sacrificed that to more attention on the flavor and presentation. Best part of the experience was leaving and asking my girlfriend " Would you go again" which was met with a group "NO".

I havent been to the Would in years. Maybe its improved, but considering the prices Im not inclined to try it again. I took an out-of-town guest there long ago and she still recalls it as one of the worst restaurant meals she ever had. The food verged on inedible and the service as barely passable. The rather tough stake was overcooked and served with a disgustingly sweet sauce. Ugh! I still cringe with embarrassment when I thing of subjecting a dear friend to such awful food.

Ate there numerous times and worked as an extern while attending the CIA. The ingredients are always local and always fresh. Everything except the french fries is made from scratch and the seafood is always fresh not frozen. The ice cream, the sorbet, the desserts and breads all are in house. Its a place off the beaten path and the prices reflect NYC however it isnt half bad. My only critique would be to provide larger portions since that is a major concern of most customers.

Please avoid going to this restaurant, and absolutely avoid at all cost hosting an event there. I was able to have an inside look, form working an event as a server. The food is awful, and the service is even worse. I would never recommend it to anyone, and this place should be shut down by New York State for sanitation reasons. Been coming here for 22 years. Its nice coming to a restaurant that is consistently good. Always fresh, food made with creativeness and and simplicity. Staff is friendly and attentive. I frequently try other restaurants, but The Would is the one I compare them to. Lucky to have so many good culinary establishments here in the hudson valley to choose from.
