Godawful! I took my 89 year old mother out for Christmas dinner and she wanted to eat at The Brasserie at the Hyatt. OMG. How far the Hyatt has fallen! The staff apparently thought they were at a party and all night long they bantered loudly back and forth with one another, completely oblivious to the diners. The kitchen is open and the chefs were also bantering loudly, with one another and with the wait staff. No one there seemed to have any awareness of the dinner guests or how they might be experiencing the behavior of the staff. There were no holiday decorations and the restaurant was very depressing. Rather than any holiday music or appropriate dinner fare, they had "lite" rock and roll playing a bit too loud over the speakers. Their only concession to Christmas was red and green napkins on the table. The service was horrible! I ordered a glass of wine and took almost 20 minutes for the waitress to finally bring it. They put down an appetizer (they called "amuse bouche" or literally an amusement for your mouth). They never told us what it was and it was anything BUT an amusement to eat. It turned out to be dry pork on a stale crouton with other things that we could not identify, either visually because they were so wilted, or by taste as there was none. One of the early dishes was a lobster bisque, which was served with a teaspoon instead of a soup spoon, making it difficult to eat without spilling. It tasted like "industrial soup" -- something that is made in an industrial kitchen somewhere else and trucked in. The entree we chose was prime rib. However, they must have run out of cooked prime rib sometime before we arrived, so they served us slabs of meat that were literally RAW! They were somewhat cooked on the edge, but most of the meat was so raw it was inedible. They served dessert while the dinner dishes were still on the table. We had asked to take the meat home (so we could cook it) and they responded by dropping plastic containers on the table and letting us do it ourselves. I didnt realize the Hyatt had fallen so far! What an absolutely horrible dinner and even worse service. It was so bad, it was funny. However, I recommend you stay as far away from this restaurant (and this hotel chain) as possible. Caveat emptor!

A very disappointing dining (take out) experience! We stayed at the Hyatt one night on 4th if July and ALL the restaurants in Santa Rosa were closed so we ordered a couple of burgers from the brasserie. We asked for medium well and both burgers were completely dry and tasteless. The lettuce was completely wet as if it sat there all day and the fries were cold. We felt as if they were heated in the microwave . Also they serve Pepsi not coke. Based on what I had I have to say- SKIP IT! P.s the hotel serves breakfast in the brasserie and it was delicious, I dont k ow if its the same kitchen/cook but all dishes seemed very good We had the pancakes and uevos rancheros, Starbucks coffee and a fruit and yogurt smoothie.

We dined here on three occasions because we were attending a conference and the location was convenient to the hotel. However, after having a disappointing experience, we decided to venture out and try other options nearby (which were quite good). My recommendation is that it is best to choose another restaurant in the vicinity. Though the food prepared well and was good and the bussers were very helpful, everything else fell short. The word “upgrade” is needed here, including the interior, the menu, and mostly an improvement on the poor attitude of the wait staff.

We did not have a good meal here. The ahi tuna was not fresh. We complained and they replaced it with sea bass. However, for the price, is was the smallest peace of fish I have seen on a main course. The bread was fair. We were there on a Saturday night at 7:30 and the place was near empty. I think the menu could be improved.

The Service was so bad , the sever was so grimy she did not even smile , the food had no Taste its look like im eating McDonald burger , and there was a Gratitude fee (19%) which they dont Deserve . The restaurant is expensive because for the prices that they put I expected much more
