Worst experience ever! Ive been here multiple times since I lived in the apts right behind the restaurant. We went in last night (6/11/17), first off there was no music and half the lights behind the line were off (weird). The first employee we encountered definitely did not want to be there, he was not polite he was not helpful, he was grumpy and didnt give us any of the sauces we asked for. Once we got to the register the poor cashier had no clue what he was doing. In the meantime, while he was figuring out how to ring up our order I walked over to the soda machine to get a drink. No ice, half the sodas were out and the ice tea was brown but tasted like water. I went back to the cashier to tell him there was no ice, he immediately stops what he is doing and tells what Im assuming is a manager or supervisor, she doesnt offer him any help and just has him fill up a bucket of ice with a scoop and put it next to he soda machine. The "manager" never once offered help to the cashier that was struggling. They never fixed any of the sodas, nor offered any apologies for how long everything was taking. Once we got our food we walked home with it, mind you we eat here often and the service has never been that great, but the food is always really good!! This time, it was terrible, the brisket was cold, the ribs were over seasoned and cold. The mac and cheese, which is normally my favorite, was terrible. The potato salad was flavorless. After spending over $40?? I probably wont be back, ever..

Weve been wanting to try Carve Barbecue since it opened and finally recently made it for dinner. While there is definitely much better BBQ to be had in town, the ambiance of the place is simply wonderful! I think I appreciated the quick friendly service much more than if the food had been top-notch but in a crowded restaurant with slow and poor service. I had the burnt tip sandwich with a side of mac & cheese, and my husband tried the brisket sandwich with a side of collard greens, and we split an order of kettle chips. So, the sandwiches were very hearty and tasty and I loved that you can choose your own BBQ sauce and add pickles and red onions! Yum! However, the collard greens were so salty we couldnt finish them, and we had to add salt to the mac & cheese because it was flavorless. It just now occurred to me we should have mixed them together into a "mac and greens" sort of thing; I think that would actually be delicious! :) The food is pretty good and a bit on the pricey side, but parking is easy, service is quick and friendly, and the restaurant is clean, quiet and has great outdoor spots. Oh, one other thing is we LOVE a good beer with BBQ but the "craft beer" selection wasnt much of a selection at all so we skipped the beer. My husband stuck with water and I tried the sweet tea which was perfect, and the kettle chips are perfection too!

The meats are all sustainably raised -ethically. I like that big time because you are what you eat... and anyone knows the first thing with bbq - you gotta start with good meat. The place is a great concept. I really like the fast casual, open seating, highly adaptable/flexible venue. The bbq has just the right amount of smokiness- not over powering, not over salted, not over seasoned. My personal favorite so far is the burnt ends or the RIBS. Those ribs are to die for. Theyre dry rubbed, not corn syrup sauced. All the sauces are made in house. The sides are all made fresh. A huge selection of pickled veggies just like they do in texas. This place is legit. I also love the beer selections. The management is tune with what people want, what they like, what they wish they had.... etc. So I have confidence that this establishment is here to stay and grow. Mustard sauce is tied for my favorite with the spicy.... surprising how tasty that mustard sauce is on so many different things. Ive covered a lot of bases at this place- Im pretty sure Ive eaten there at least 5 times since they opened. Ill be going back often. The salad and burnt ends is my go-to. Perfect lunch.

I was told this was a great BBQ place... it even looked upscale ... Once inside , It was glaringly obvious that most of the Staff working on February 4th 2017 at around 6 pm were Heavily Stoned, I reviewed half Sentence answers and blank stares from at least three of the young men ( use that term loosly these days!) It was some of the most Dismal Service I have experienced in a restaurant in some time, I frequently eat at Rudys BBQ in Colorado Springs and the Bright attentive employees are clearly not high on Marajuana like at CARVE. Carve Owners - you should probably start by cleaning house with a couple of random drug tests , and most defiantly a pre employment drug test... Unless these are the beat restaurant Employees Denver Has to offer? I wont go back - The upscale feel of this place went right out the window once I engaged the servers of the food. Food was decent but I doubt I would return.

Restaurant wasnt busy but the girl taking orders was still kinda pushy. Had the burnt ends and a hot link. The link wasnt very good, but the burnt ends were okay. I ordered them with the sweet cherry sauce which was cloyingly sweet and didnt seem all that spicy. I tried it with other sauces. The house mild was the best one... The Carolina Gold was okay but I dont like mustard sauces. I ordered the coleslaw and beans as sides. The coleslaw was swimming in its creamy dressing and the beans tasted no better than a good supermarket brand. I kinda had sticker shock that this meal cost over $20. Certainly didnt taste like it. I had been anticipating trying this place and was sorely disappointed.

Im a big fan of barbecue, and the meat is fantastic and tender, but as a dine in experience it leaves a lot to be desired (out of bbq) For the life of me, i couldnt find a sauce they offered that i actually liked, mild has WAY to much vinegar, spicy hot gets drowned out by peppers, and the cherry is well, cherry barbecue sauce. If you like a "regular" barbecue sauce them maybe bring your own sauce or take it home. The atmosphere and staff were fantastic, but being unable to get a good sauce at a barbecue place really killed it for me. Value - Two pulled pork sandwiches, a drink, and a mac n cheese was 20$

Looks really cool. And thats where the compliments stop for me. I know its only their 2nd day so I get that things arent always smooth....But that was some of the most disappointing BBQ Ive had in a while. All the sauces have this odd, artificial sweetness to them. The pork came lightly dressed in one of these sauces. They do baked beans, had to be out of a can that was doctored with a little bit of brisket or something. I was hoping for something several steps above what you get at Brothers or Dickies. It wasnt even that good...I will try again in a few weeks to see if it got any better.
