d Pizza and Wine Bistro is one of the better pizza places Ive tried in San Antonio. The Quattro Formaggi was underwhelming. The bread didn’t taste fresh and the cheese was in short supply. The taste was a bit off-putting. Finally, the marinara sauce, which is the same sauce used on everything else, was a little bland. However, this isn’t a terrible thing: it’s better than most sauces that are so bold that you either love them or hate them. The Pasta with Meat Sauce (Penne Bolognese) was one of the better spaghetti dishes I’ve had at restaurant. In fact, it was so good because the sauce was not overbearing, bitter, or anything else. It blended well with the dish. The Old World Classic, half Classic Pepperoni and half Classic White, was rather delicious. The crust a bit unique and generally delicious. The cheese, pepperoni, and spices were a delight to the taste buds. The White pizza had excellent flavor and I appreciated the olive oil and garlic. However, both pizzas don’t match Florio’s, which does both better, in my humble opinion. The Chicago style pizza aint too shabby. The crust was cooked relatively well, though thinner than you would expect. Also, a true Chicago deep dish, is well, deep, and this wasnt. Another problem was the crust wasnt dusted and made with cornmeal. The crust was really the only flaw as the toppings were nice and flavorful. In short, Trilogy Pizza is a great pizza place with some good Italian-ish dishes as well. My top 5 pizza places are: 1) Florios, 2) Julians New York Style Pizza, 3) Stella Public House, 4) Dough Pizzeria Napoletana, and 5) Trilogy Pizza and Wine Bistro.

What interested me in Trilogy (aside from the positive reviews) was the deep dish pizza. If you think New York-style pizza is hard to come by in this city, you can forget about Chicago deep dish. Just offering a take on the dish is good enough to earn Trilogy some brownie points. Feeling adventurous, I tried a small deep dish mushroom and sausage, along with a small New York pepperoni and garlic. I wasnt a big fan of the New York. The crust was uniformly thin - about 1/4" - and was topped with pure mozzarella, pepperoni, and so much of an oregano garnish that it almost should have counted as another topping. Everything was good enough on paper, but its now quite in that authentic New York style you might find at Central Park or Florios. I do caveat this with a reiteration that I ordered a small, which isnt always representative of a larger pizza, crust-wise. The toppings should all be the same, though. I liked the deep dish better, possibly helped by there not being too much of a benchmark in the city. A hefty amount of sauce, cheese, fresh mushrooms, and sausage were satisfying, helped by the slightly sweet sauce which was given more opportunity to shine through on this offering. The crust wasnt the crispiest, but when youre basically making a casserole, the virtue of being able to pick up a slice without it falling apart is accomplishment enough. Authenticity aside, Trilogy is home to a host of gourmet ingredients and cheeses, so there is plenty of room for innovation with respect to your pies. Between this and the deep dish, its enough to keep me coming back.

This was our second visit to Trilogy, and it definitely wont be our last. I was feeling under the weather on Valentines Day, so we postponed our celebration until Saturday night. We thought this place would make the perfect "date night" spot. We werent wrong. Its a good thing hubby and I like to eat dinner early, as the place was already packed at 5:30pm. The same waitress we had when we went for the lunch buffet the previous month, greeted us when we arrived. She actually remembered us! Fortunately, we found a tall table back in the corner. Great spot! We both ordered a glass of wine while we waited for our pizzas. You can actually watch the owner tossing the dough for each order! While we were waiting, we noticed the huge number of carry out orders. This place is popping on a Saturday night! When our pizzas arrived, we werent disappointed. Hubby ordered the Quatro Forni without cheese on the New York style crust. I had a pepperoni, mushrooms, and black olives, also on the New York style crust. Both were amazing! The crust was thin and crispy with the slightest amount a char from the brick oven. Thank you Trilogy for another great meal! See you again real soon!

My wife and I recently moved to San Antonio from Chicago and knew that good pizza was going to be hard to find. Weve tired a handful of places and nothing even came close to what we were used to. The "good" pizza weve found has been bland at best. A friend recommended Trilogy a few weeks back so we figured why not give it a try. We were skeptical but had been craving good pizza for months. Well, we were not disappointed. Trilogy is pretty true to Chicago style pizza, and its definitely the best pizza (thin or deep) that weve had outside of Chicago. Its no Giordannos or Lous, but it is quite good. For all of you Midwestern transplants out there, and for anyone looking for a good pizza, Trilogy is definitely worth a try.

Being from Chicago (just moved here 6 weeks ago) we were jonesing for a decent pizza... Sorry, Pizza hut is not good pizza. Looking for a deepdish we found trilogy. The service was good and pizza was a Chicago Style deep dish. Was it as good as Chicagos Giordanos ? no. the sausage was some type of frozen little round sausage balls instead of real, crumbled italian sausage. That really knocked it down.The sauce was good (a sweeter sauce) and the crust was good if not a little crispier than I am used to. Long and short: On the drive home the family agreed that it isnt the best deep dish weve had BUT we could imagine that being served in Chicago. Close enough to get you through Deep Dish withdrawal.

Superb taste and quality! The service was great and attentive. We ordered the Chicago Deep Dish and usually we go in places with high hopes and are let down. This was not one of those times. The pizza was cooked to perfection. It wasnt overdone to where the bottom was burnt like you may find at a lot of places that claim to have "authentic" deep dishes. The toppings were tasty, the sauce was a bit overwhelming and pasty but that did not interfere with the seasoning flavor too much. Would definitely recommend this place especially because the deep dishes are less expensive than competitor prices and better-tasting, cant go wrong!

Excellent happy hour priced cheese bread apps! Superior quality and taste. Waitstaff was polite and professional but on our pizza we ordered pepperoni with half adding sausage. We didnt get any pepperoni unfortunately. It could have been our mistake for not speaking clearly enough but nonetheless tasted delicious. Plenty of parking available and a really easy going atmosphere inside. I will be back, and soon.

I took the family for the weekend special and got a NY style and Chicago style pizza and was pleasantly surprised. The kids had not tried Chicago deep dish so I went with Trilogy based on the reviews. The BOGO special made it a steal. The food was great and the service was good. The artichoke/spinach dip made the short wait go by fast. The leftovers had the kids asking when we could go back.
