Well Texas Barbecue made it down to Two Bros BBQ Market this morning and let me tell you we had a good time and had some great Texas Barbecue. Pitmaster Laura Loomis wasnt available today but the extremely knowledgeable Chris Jerrick stepped in and handle all the questions and gave us a great tour. Laura, were sorry we missed you and well catch you on our next trip. First off the location is in an amazing setting. Its literally right off the road but its more like a little village area of several different business all snuggled under 100 + year old towering Oak Trees. The restaurant itself has them providing shade all over the outdoor seating area. With the breeze blowing, the smell of the brisket cooking and the selection of oldies playing in the background its a very relaxing and laid back environment. The only draw back was the airport is just down the road and every so often the sky is decorated with a blue, gold and red Southwest Airlines jet coming in for a landing. But I will tell you I found it more entertaining than an inconvenience. They were actually fun to watch. As you step inside the building its like stepping back into an old German or Czech dance hall only with tables and chairs. You can conveniently place your order, have a seat and then in just a few minutes your order is ready. And let me tell, the brisket is all you have ever hoped for. Its got great bark, beautiful smoke ring and very moist. Today I had a pound of brisket, a cherry glazed baby back rib and the turkey. The baby back tore right off the bone and had a great flavor with the cherry glaze added to it and as for the turkey, I was shockingly unsurprised. It was so very tender and moist with a perfect flavor. I could have made a meal just out of the turkey if the Star of the show wasnt the brisket. Chris Jerrick who has been working with the pits on site since 2011 said knowing your pit and controlling your fire is key to making great brisket consistently. "Consistently" being the key word here. Using only Oak, the crew is constantly watching over the fires of several pits making consistency no easy chore and maintaining a fire around 250 degrees always has them working. Chris said they will start the brisket out with seasoning, salt and pepper of course but they also have a special seasoning. Chris said it was put together by co-owner, Executive Chef Jason Dady and if you keep up with Iron Chef Gauntlet on the Food Network then you know you have a winner in the seasoning. Chris said patience is also key to consistent barbecue because some of these briskets are truly 24 hour, slow and low heat, dreams come true. Two Bros also did something a little different that Ive only seen a few times before. They wrapped their brisket with butcher paper towards the end of the cook because foil keeps it too moist. And believe me folks, he knows what hes talking about because this Texas Barbecue was great. Two Bros BBQ Market, a must when traveling down the Texas Barbecue Trail. Located at 12656 West Ave in San Antonio, Texas. They are open 7 days a week, Monday - Saturday 10:30 to 8:30 and on Sunday 11 - 7. Plenty of parking and kid-friendly with a playground right on site.

6/28/13 Oh my.... where do I start? Two Bros BBQ Market is nestled under some beautiful, mature Oaks, in this quaint, little village-type setting. There was live country music being played outside, on their patio, that could be heard, as our family walked up. My husband open the door, to let myself and our 4 children in, and 3 employees, with their hands full, walked straight out the door before we could even get in: no excuse me; no Im sorry... not ANY acknowledgement AT ALL.... However, once inside, the place smelled heavenly, which immediately took my mind off of RUDE behavior of the staff. The decor looks like someone purposely went to great lengths to make it look very country, shabby-chic. The menu was.... super confusing for a first timer. Who really knows how many pounds of meat one needs to order to feed a family??? We stood there at least 5 minutes trying to figure it out before we finally just asked the girl at the counter. She didnt have a whole lot of advice to offer either. We ended up ordering: 1 lb brisket ($14.95/lb) , 2 sausage links ($2.50 each), 1 large side of mac-n-cheese ($4.00), 1 large side of potato salad (another $4.00), 3 kids drinks, and 2 adult drinks. Our bill was a grand total of $42 & something....Here is where I should add in that they HAVE family meals that were way more food for less money, BUT they were out of ribs AND chicken at 6 oclock on a Friday evening. Ultimately, because we were feeding 3 young kids that are picky eaters, there was plenty of food. Our children were going out to the back area, outside, ahead of us, and I see this little girl, around 6 years old, PUSHING my 6 year old son away from stage area. At first glance, I thought maybe it was one of the little girls he went to school with playing with him, since we live in the area?? I asked him about it, and he told me he didnt know her, but that she told him to get away from where the other kids were watching the band. I found out later that she IS THE OWNERS DAUGHTER!! WHAT THE.....???? So rude employees, RUDE owners daughter, and the food??? The singer of the band kept referring to the award winning pit master.... apparently HE has NEVER heard of salt!! The brisket had a very nice smokiness and tender texture, but it was completely lacking in any flavor. The sausage was alright- good flavor and texture, and Id be interested to know if that is some thing they make or buy. Their mac-n-chesse was creamy, cheddary and delish! The potato salad was just ok. By far THE best thing about the whole place is the outdoor area, with a drink station, stage, tons of seating and a very large play structure. The overall ambience of the outside area was really nice. But it seemed everyone there was yuppy-ish and rude. I kept telling my husband that Two Bros has SOOO much potential and is *almost* awesome.... Almost. We wont ever go back, though.

A San Antonio BBQ tour was due. The only time that I have had barbecue in San Antonio was at the original Rudys which left a bad taste in my mouth. Amber and I went to the ACL Festival the previous day so we were exhausted from it. Somehow we still managed to head out early Saturday morning because my wife really wanted to try Magnolia Pancake Haus. When we arrived there, I had the biscuits and gravy, and they were awesome. About five minutes down the street was Two Bros. BBQ Market so we made it the next stop on the trip. I actually wanted to go to The Granary Cue & Brew first, but this made better sense. I have tried Two Bros. before at a TMBBQ event. We got there right when it opened and were the only ones there. I love it when you open your car door and the first thing you smell is the smoke in the air. Everything on the menu is ordered by a quarter pound. I ordered some moist brisket, pork spare ribs, pork baby back ribs, and a link of sausage. The brisket was chewy. It needed to stay in the smoker a bit longer to break down the fat and collagen more. It did have a good bark and smokiness to it. The spare rib had a nice smoke to it, but the flavors were bland and boring. It was also a little tough to bite the meat away from the bone. The cherry glazed baby back rib is where it is at. The sweet, succulent meat was righteous. The smoke definitely put the rib over the top. The sausage they served was good. The pork and beef blend had a nice pop and was flavorful. Two Bros also has three different barbecue sauces. One is sweet, one is tangy, and one is made from molasses, coffee, and Shiner beer. Two Bros. BBQ Market is co-owned by Chef Jason Dady and his brother, hence the name. Their restaurant made it onto the 2013 Texas Monthly Top 50 BBQ joints list. The location also has a huge patio with a play area for the kids. Everything on the menu had the right amount of smoke from the oak wood. It is a definitely solid choice considering the brisket could be much better on a good day. I would say we were off to a good start to the San Antonio BBQ tour.
