We have been to other Pieology locations and have been pleased with the quality of the pizza. however, at the Gilroy location this evening 08/15/17 we were very disappointed. My husbands pizza was burnt across the entire bottom so much so that he had to remove the topping and peel the burnt bread away from the bottom. To make matters worse, he took the pizza to the cashier after finishing the topping and showed him all the burnt bread and the amount that had to be pulled off. He told the cashier that they need to check the temperature and /or the cook time of their pizzas. The cashier said he would check it but then without an apology he shrugged his shoulders and walk to the back room. Needless to say, we wont be back to the Gilroy, CA Pieology location again.

Pieology feels like you walked into Chipotle but they give you pizza, instead of burritos. You get three options of crust, flour, wheat, or gluten free. Then you can pick your own sauce, cheese, and toppings. It takes maybe 5 - 10 minutes for them to bake your pizza. I was shocked at how good the pizza was. The crust is very thin, thinner than New York style, but it was delicious. I will absolutely be going back.

Great pizza, but the service of the actual employees is ridiculously. You have a big line with nobody helping while the employees gossip amongst enahcother. Putting all the work load on one or two out of the 7 employees they have is ridiculous.

You get to make your own pizza with whatever toppings, then the employees put it in a fire oven. Great pizza place but, for the serving size, is a little expensive. But that is to be expected for a create your own food place.

This place is OK. It can take a while to go through the line. I dont always feel like the ingredients are the best they could be. I have had better pizza.

Decent pizza, good price. Think Subway meets pizza. I have a had a couple different custom pizzas, but they all kind of tasted the same.
