Pieology is like the pizza version of Chipotle (although Chipotle went GMO free in 2014, pieology doesnt claim any GMO free menu). You walk in and select the toppings of a flat-crusted pizza as you walk across a line/counter to the register. All of the pizzas have a flat crust and a gluten free crust is available (its smaller than the regular and is $9.99 for about the size of a large plate ... A bit expensive for a flat crust). The employees are nice and the pizzas taste good overall. Service is quick, but skip the cinammon sticks. They taste mediocre. Gluten free cinammon sticks are provided (2.99 extra), but all they are, are flat bread pizza crusts glazed in sugar and cinammon. It looks unappealing and dont taste appealing, at least for me. I wish there were more vegetarian and vegan free options. The restaurant gives a new twist to the classic pizza joint, but I still feel like its a bit mediocre given the critic above. 3.5 stars. Its worth the visit though!

1st time here. Great service and love the build your own theme. Overall food was good. Toppings seem to be fresh and I love the options of toppings. My only issue is the pizza was not hot. It was more warm to just come out of an oven. I will come back but will request additional oven time next time. The toppings were cooked but the pizza was just warm. Great idea for a pizza spot.

I go here from time to time and usually order ahead. One day there was a detour and I was 7 minutes late, I arrived and the 2 employees looked at one another and one said someone canceled my order. I was pissed because they knew they just tossed it. I cant help detours! And they could have called me first. I gave 3 stars because of this l but Otherwise they get 5 stars

Huge selection of sauces, toppings and they dont skimp, nice thin crust. Servers are quick and friendly. Good value, feed 4 with individual pizzas and beverages for ~$40.

Ive only been here once, but I liked the concept (almost like a Chipotle for Pizza). That said, Im a thin crust kind of guy, and generally am happy with that anywhere.
