I had been a patron for this cafe for years until I couldnt take their greasy smell on my clothes after eating there so I left. But, with the news of the business being sold, I tried it again, twice, in the last few months and have to say, with the change in management, the attitude from the waitstaff leaves me disappointed enough to offer no recommendation except for the food (which can be tasty and novel). First return visit was made 25 minutes before they closed. It was clear from all their huffiness and shuffling table condiments around that they did not want our business. So we quickly ate and left. The second, and last time, on December 21, we were asked, immediately after finishing our lunch, how long we would continue to occupy our table because others were waiting. Two people were waiting and one two-top table was open. I wonder if rudeness is this new managements approach to customers.

Im from CA and out there we have a little mountain town called Idyllwild, in that little town is a place called The Red Kettle that my husband and I absolutely LOVE!! We moved here a week ago and decided to try this place, since it seemed a bit similar to The Red Kettle. There were a lot of college kids, its a little crowded and smokey on the inside, but we still sat down and ordered some food. My hubby got eggs, bacon and home fries. I ordered french toast, bacon, eggs, home fries and toast. OMG! It was ALMOST as good as The Red Kettle, the home fries were so delicious, the apple wood smoked bacon, which is the only kind I really like was cooked perfectly and the french toast had the perfect amount of cinnamon! We were full, satisfied and completely happy with this place! Well definitely be going back to this place for Saturday morning breakfast!!

My wife Sylvia Steigler-Hahn and myself have been going to Blue Sky for a long time. It was the first restaurant I went to with now my new wife. I was introduced to the Big Mama Pancake and of course the Peach pancakes and the literally scrumptious Red Velvet pancakes. We have eaten every thing on the Blue Sky menu. The owner whom we know personally is a polished professional and extremely intelligent person who cares about her customers and needs. She is not afraid to take risks. Tabitha thank you for bringing Blue Sky to Bethlehem PA. I highly encourage customers of the Bethlehem Eatery to also try her new eatery in Easton PA Blue Sky at State Theatre Cafe and Grill. She has opened the new eatery recently. KUDOS Tabitha. and Thank you.

Over hyped hipster joint. Sometimes great food, sometimes mostly edible food... NO CONSISTENCY! The service is ridiculously bad, servers greeters are either stoned or dumb... Just left and went to Alexandras Cafe bc even though there were 10 people waiting inside, they chose the couple with the well behaved 3 year old to tell they were a fire hazard. Was holding my daughter and standing out of the way of the door. And it was freezing outside. They called 5 minutes after we left to tell us the table was ready after saying it would be 25 min! We were already at our table and about to order at Alexandras, and they are friendly and have GREAT diner fare. BLUE SKY is deaf to me... Keep your cramped dirty place and burnt potatoes.

I have been searching high and low for a place that could serve me breakfast in an atmosphere that reminded me of my grandmas kitchen, or all those great restaurants I went to in college. Blue Sky Cafe delivered! I visited was after reading online reviews, and I was not disappointed. The portions are large, and everything was made fresh to order. Even with a full house the service was prompt, and we never had to flag down our waitress. The owner clearly has a sense of humor, as she shared personal anecdotes on the table cards, but her attention to detail in no way interferes with the food. We will go back again and again! Insider tip: the sweet potato quesadilla is hands down my new "pick me up"!

Has been pretty good in the past, but our latest visit was abysmal. It took over an hour to get our food. The people sitting next to us were seated after us and finished their entire meal before we were served. My omelette (The Diablo) was not as well made as it usually is and somehow my order of rye toast was translated into fruit salad. Our waiter was not very attentive and never gave us any indication that the wait would be so long. The host had headphones in and seemed very antisocial and checked out. They explained all this away by saying they had new staff they were training and they paid for our food, but the experience was so unpleasant that we all still left in a bad mood.

Sad to have to update my review, but this whole system is reliant on honesty. Blue Sky has taken a dive into some dark territory. The wait no longer feels worth it. The service was inattentive and the wait for food put the whole experience at a painful 2 hrs for what was supposed to be a quick meal before leaving town. We ordered lemon ricotta pancakes. The flavor was so unnoticeable, we were convinced we received a sad single plain pancake. Nope, they just skimped on the ingredients to bring this recipe home. Sad to see this place fall, and to have to remove it from my regular haunts while in the valley visiting the family.

Was there at noon today and though waited 60 minutes, and talked to three separate employees no one served me and my friend. On the contrary, they continued to say someone would serve us and then proceeded to serve three other tables and not us. This was started by a waitress who told her manager to ignore us. This is a first for me in rudeness to such a degree and lack of manners. If I was of a different ethnicity I would have shouted racism. Instead it is just a case of a nasty behaviour by one employee and continued by the rest of the staff. Will be contacting owner. Shame for the food looked good, just bad staffing choices.

Food was great! We were talked into going by our son who frequented the place while he attended Moravian. As described before, if you go on a weekend, the wait is measurable, but well worth it! The Lemon Ricotta Pancakes are out of this world and the sides, bacon, homefries etc are delish as well. Very ecclectic and has some interesting artwork on walls which keep you entertained while waiting for your food to arrive. Service is always wonderful and food cant be beat! Nice place! The only thing with all these great reviews is that now its not a little well kept secret!

This place is outstanding. Consistently excellent breakfast. Ive been here four times now, and its just so good that I have to tell people about it. The sweet potato quesadillas and southwest hollandaise are my favorites so far. The coffee is fantastic. How many times have you sipped nasty coffee out of a bottomless cup at a breakfast joint? Not here! Here its coffee shop quality, and its locally roasted, too! If youre in Easton for the farmers market on Saturday morning, leave yourself time to grab breakfast here. Youll be glad you did.

The food was amazing, the service not so much. While the waitress was nice, she was clearly overwhelmed by the amount of people to serve. I seen two customers walk out, and I never got my water after asking ten minutes prior. She did apologize for the wait and was nice, so that with how good the food was means I will go back, and wont leave an exaggerated bad review. Also on a side note there is no white toast, and while I dont mind because I prefer wheat, I know that did not make my Fiancée happy.
