WHAT DID I GET: A slice of the chocolate espresso cake, a slice of the vanilla passionfruit cake, and a cornmeal thumbprint cookie. HOW WAS IT: Incredibly delicious! The cake at this place is what you eat when its your birthday, or you just got that promotion, or if you just need something to make you smile. The vanilla passionfruit cake had a great balance between sweetness and acidity, and the passionfruit gave it a really pleasant, but not over-powering, tanginess that gave the cake a really vibrant flavor. The chocolate espresso cake had such deep and complex layers of flavors, and you can really taste all of the ingredients that went into this cake. It was rich, decadent and sophisticated. The cornmeal thumbprint was truly a unique cookie; Id never had a cornmeal cookie before. But this one was really good! It was kind of a soft-chew, which I liked, and it was moist but not to the point where it just turned into bread. It had a really pleasant texture, and the taste was simple, delicious, and very satisfying; biting into this cookie felt like going to visit your grandparents on the weekend when you were a kid...it just made you feel really happy and safe and warm. HOW MUCH DID IT COST: All together, it was a little under $16. WOULD I COME BACK/RECOMMEND THIS PLACE: Absolutely to both! This is one of the best bakeries/cafes that Ive been to in a while, and the food here is great and the service is very friendly. Next time, though, Ill also have to check out their drink menu. The only criticism of this place is that the seating is pretty limited, but thats also partly because its a pretty popular place.

I like Proof Bakery. These are the crispiest croissants ever. My fave is the chocolate croissant (3.75). Ive tried the almond and didnt like it as much. Just go for the chocolate or plain. Ham sandwich 8 - tiny and pricy! Its worth trying and is extremely delicious but 8!? The bread has big chunks of sea salt on top. Its more pretzel than baguette. Really chewy and salted. Its so good!! But so expensive! Rugelach 1.5 - this is a tiny crispy croissant with nuts and sugar inside. Kinda like a french baklava. Two bites and its gone. Kinda pricy but interesting. Ginger molasses cookies 2 - kinda dry. Not as chewy as I wanted it to be. Crisp on the edges. Shortening cookie so it scares me a little bit. Chocolate chip 2 - prob the best chocolate chip cookie Ive ever had. Crisp edges, chewy center. Chocolate throughout the cookie. Flat and wide. Not too sweet but sprinkled with sea salt anyway to make it even tastier. Dear god my mouth is watering as I write this. Ive got to get one tomorrow. Do not leave without buying a chocolate chip cookie. Its the iconic chocolate chip cookie done well. Gougeres 2 - gooood. These are cream puffs mixed with cheese and black pepper. So gooood. Crisp on the outside, eggy and soft in the center. Soooooo gooooood. Get 2 cuz I bought one then went back for another because gluttony. Street metered parking but if pull into the neighborhood parking is free.

LOL @ the server who said they didnt have canelles because it was a cloudy day, and so the market wasnt set up, so they couldnt use the freshest ingredients that were available to them, yada yada yada. Canelles take at least 24 hours to make, not made fresh daily, lady. The same lady also sold me a "chiffon lemon cake", which was not a chiffon cake. It was just cake. As a bakery I expect the employees to know the difference. Cake 5 - was good but a small piece (maybe 2" at its widest point) at a high price tag. Europane offers a lemon chiffon cake and the slices are enormous. This cake wasnt as doused in lemon syrup like Europane so it was more dense. Not like a chiffon cake at all. I liked the marshmallow shell, it wasnt too sweet, nice and fluffy. Too small, not lemon-y enough, missing the synergy that Europane has with their cake. Americano 5.5 - strong, smooth. I asked for it to be sweetened. The guy put chocolate in it to make it sweeter. Um....I guess? That was a first. It was ok but I prefer my coffee without chocolate. It was good for a mocha. Average pastries. Nothing to see here. Terrible service. Nice enough but dang, know what youre saying or dont say it at all. Too rich for my blood.

Granted, they make awesome sandwiches with bread that is almost addictive! The first time I went here I was raving to all friends and would have given 5 stars. But subsequent visits have been a bit disappointing. Never again seen the Shishito pepper sandwich I had the first day (I understand they make whats freshly available, but comeon!). Latte is often not hot enough, inspite of my insistence on extra-extra-hot (again, theres a willingness to redo it, but hey, I cant bring myself to pour a huge cup of coffee down the drain). Today, sandwiches were over at 1.30pm. Can we not just have enough made to last an extra crowd? Especially when going to the place is like going to whole foods... u lose an arm and a leg, and have still not sated yr hunger fully. Food is all of superior quality, especially the sandwiches and the coffee bites, but the premium does feel high.

i cant say enough good things about proof. the pastries are amazing - they make my favorite almond croissant. the croissants here are buttery and perfectly flaky, though slightly different because they actually use some sourdough starter in them. and in the early spring, they will do a run of pistachio croissants that are ridiculously good. they are really picky about the quality of their pastries too - ive been a regular for years and there will be days or even weeks where they wont serve a specific pastry because it just didnt come out right. the coffee program is run by cognescenti, which is always on point. the space is small though, so there arent many tables, and the line can get quite long on weekend mornings.

AMAZING! 1. Every single thing in the pastry case is amazing. 2. I would start with one of the best chocolate chip cookies ever. Its loaded with chocolate, very soft with a bit of crispiness. Just gotta trust me. 3. The fig tart when available is not to be missed. 4. The staff is helpful, knowledgeable and friendly. 5. The most unexpected find at Proof is the coffee. The Heart Roastery pour over was better than anything Ive ever had in LA or SF. The catch is the price. Even for a coffee this good, I have a really have a hard time paying $5 for a fairly small coffee. Its your call, but its damn good coffee.

Nice little spot for a coffee and pastry. Their coffee is nothing spectacular but its nice when paired with one of their treats. I tried the ham and cheese sandwich which was cute and yummy...dont expect a large, American sized sandwich, the ones at Proof are made on skinny baguettes. I also tried the almond croissant and it was delicious! Every bite was flavorful. The sandwich, croissant, and 2 regular coffees cost $16.00. The place is tiny with limited seating (something that I didnt enjoy) so we ate/drank standing up until some hipster boy taking up a whole table finally got up.

LOVE this place - my family has a Cookie Walk we do when we feel like some Proof Bakery. Theres always a line out the door whenever Ive been. Popular with tourists and locals alike. I only wish they had a regular chocolate chip cookie - without the nuts. Otherwise, that would be my favorite. I also like the oatmeal raisin, though I generally dont like oatmeal raisin. Theyre best when still warm on the inside! The cookies are a bit pricey ($4) but so delicious... I would like to try some of their other bakery items but I always get sidetracked by the cookies...
